    I don't fully understand how the "snow days" here work. They'll announce that buses are cancelled but classes are not. How is that safer? Or maybe classes are optional? I've been told if it's very cold, schools will be open so no kids who make it there freeze to death.

    The latest one we had was last Wednesday. It was about -20F so buses were cancelled because they were "running late". But it hadn't snowed in quite a while so it's not like the highways were dangerous or anything. Just makes the bus drivers seem like wimps, in my opinion.

    Are the buses diesel? 20 below is rough on diesels if they aren't just flooded with antigel, and even with that and a block heater, there's going to be delays.

    True enough. I hadn't thought about getting them started. But if you can get your bus running, then there's no excuse. My grandfather used to get diesel tractors running on the farm when it was really cold, though. There are oil warmers and other things that can help. (The livestock still need to be fed and watered regardless of how cold it is.)

    This is true, but guberment's are known for keeping useless employees that do the minimum. Maybe they didn't plug in warmers, or didn't use antigel in the fuel.

    Also, I think the diesel sold here has to have a pour point of minus forty-something. Not quite as low as jet (-60ish) but it's down there.

    Restaurant ceviche is usually garbage so if you try it, don’t compare too much. Hard to find a good ceviche dish unless that’s their speciality

    I've never had it. Not something I'd go pay money for because it's risky. If I knew somebody that made it and it was generally reviewed as good by "experts" then I wouldn't refuse to try it. That's all I'm saying.

    Cooking up??? I'm pretty sure you just let the 'acid of choice' do all the work w/ceviche... now I'm hungry :mad:

    Man, I miss San Diego... we had a great fish taco place that made an incredible ceviche!!!!

    The top ones are 'surf and turf' (steak and shrimp); one battered fish taco on the bottom right; two grilled mahi on the left :drool:

    Very kind, but seafood in Wyoming isn't exactly fresh. LOL

    Also, it's not just beer that I avoid. I don't drink any alcohol. Too may bad experiences with other people drinking, and I'm terrified I'd fall in the bottle and never come out.

    If you don't like avocado, you could always run a light crema; you just want a light balanced fat w/a splash of acid (lime juice) on there; and don't want anything that overpowers the flavors of the delicate mahi

    I like the lime juice on regular tacos, so I'd be down for it here. Not sure what "light crema" is. I'm a culinary retard. Is that going to be something like sour cream? Or, could I use guacamole instead of avocado? It's really just the texture that gets me.

    Crema is kinda like sour cream, but you've got to be super light w/it on fish; so, I'd probably mix it up w/a little EVOO and lime juice... Yes guacamole would be fine, but you've got to be careful w/that cuz most have onions and hot peppers in it; so, again, you don't want to overpower the fish. Now if you make your own, and just kinda smash up the avocado, add a little lime, and a small dab or 2 of crema... you'd be good to go, then just give the tortilla a light smear of it, or drizzled over the top!!!!!


    This is a decent one that's easy to find in most dairy sections...
