Broke mine down too. Been sitting in the fridge uncovered with the dry rub for 48 hours.

 

My wife brines a turkey every year. I didn’t get a pic because it’s in the oven. It is our least favorite meat by a long shot, but she’s really stuck on the tradition, and she uses the aftermath of its carcass to make a ton of excellent bone broth afterward.

 

No bird here, my mother in law bought a softball size sack of turkey breast and said she thought it was a small turkey ><

 

Pigs can fly right?

 

Best part of hacking it up before cooking is I can make the bone broth early. Made 2.5 gallons plus a nice little jar of schmaltz.

If the inter webs have taught me anything, it's that pigs can fly. It's the takeoff that's hard for them.

Smoking on the GrillaGrill for 3.5 hours so far…… brined it overnight.

 

Mine is brining and will go in the fryer this afternoon.

Typically I brine and bake or smoke, but wanted to try the fry method this year. If I don't burn down the house I'll report back with results.

I don’t know why I didn’t spatchcock the bigger turkey breast.
All the compound butter is dripping over the ribs, then I’ll probably move racks when I go to wrap the ribs

 

Only the wife and kids this year.
I ask her to get a smaller bird.
It was smaller because it didn’t have legs.



I wasn’t disappointed.
