Here's a little food porn!! We only took one photo of the various courses served during the meal. I think we were way too busy enjoying the experience to worry about snapping photos. Anyhow, I'm not a huge cheese fan, so I had requested an alternative to the cheese course and was served this... It appears very minuscule, but balance and flavors achieved w/such simple ingredients were unbelievable.

 

Avocado for sure, looks like guac and strawberry jam, watermelon or grapefruit, and chickpeas?

 

Radish greens too possibly?

 

Grapefruit and avocado purees; sliced grapefruit, avocado, not sure what the small round halves are (kinda look like baby peaches), a mixture of spicy greens. Definitely no chickpeas. My wife has a list of everything we had that night, I'll have to see if the ingredients were itemized on the list she has...

 

Ah, so not far off on the guac, and grapefruit was on. The things you say look like baby peaches are what I thought were chickpeas, but only because I have no idea what they are.

Next questions: How the hell do you eat that? Fork to stab bits and wipe then through the puree? Spoon to scoop while trying to not make nails on chalkboard sounds? I guess part of why I am struggling is I can't see any kind of scale. How big was one of those avocado cubes?

 

So, the pieces were relatively small. The avocado cubes were about the size of 1/2 of a finger tip (single bite size). Small fork was provided w/that course. I believe it was intended to pick up a piece of grapefruit or avocado, then gently (no nails through chalkboard sound) slide the fruit through the puree(s) and enjoy. First bite I did opposite puree to fruit, but it was actually a much more balanced bite when you combined both purees (probably because of the balance of acid and fat)...

Each course was relatively small. But, the "experience" was based on a 14-course tasting menu which lasted about 3 hours from start to finish. There was a constant back and forth play between rich/heavy ingredients and ones that are bright/refreshing and palate cleansing. Surprisingly at the end of the meal, neither of us were "stuffed" or had that bloated from a big heavy meal feeling.

If you can eat sushi, you can eat this. Texture and taste was both as you’d expect it. It was pretty cool. One of my coworkers was trying to not chunk on the table, so I finished his.

 

. Delta maintenance hangar at the south end of Seatac? Very cool. Is that a A330? Hard to tell from the pics.

I wish we could give tours. I do that for the interns but if you are not an employee you have to either take the tourist version or wait for the occasional “family weekend” when they open the factory up.

 

Today is one of those days where you make a list of the “must do today” and then get distracted so nothing on the list gets accomplished.
