    Exactly. There’s nothing wrong with using those, but you just need to be aware of the limitations.

    I just went through this. Wanted a really good, cheap knife. Ended up with an 8” chef knife from Misen. I bought one with a blue handle. Every other knife in my kitchen has a black handle. I wanted something different so I could tell my kids not to touch the one with the blue handle.

    I have a few knives from my grandfather who ran a stage coach out of Silver City, NM. in the late 1800s into the early 1900s. He used these knives daily and they show the wear. To my knowledge, they have not been sharpened by anyone since. The larger one is a Joseph Allen & Sons Bowie out of Sheffield England and was purchased pre-1900. I Believe the small bone handled one is a Schirgek out of Germany also pre-1900.
    The rest of my knives are just a bunch of boring Benchmades, Gerbers, Kershaw's, Bucks, Bushmasters, and one Lionsteel.
