You wrapped it, so it’s definitely not taking on any more smoke……….. throw it in the oven to save on pellets?
When I do ribs, I do a modified 4-2-1 method, and I always throw them in the oven for the wrap, specifically for pellet usage, and also temp consistency(I’m sure my oven can hold temps better than the smoker)
That was a tip from a local smoke master.

 

I feel like I was doing the same thing on my recent unplanned vacay…….

You are absolutely right, I could throw it in the oven but I just prefer to leave it on the smoker. The Bull stays pretty consistent and it bakes the shit off of the grates to make it easier to scrape.

 

My smoker holds temps much better then my oven.

It does. We have a new oven and when I run probes it is all over the place. My smoker only varies 1-2 deg

imho, wrapping messes up that beautiful bark.
I only wrap when time is an issue to quicken the stall.
Bring it to temp then rest in a cooler.
If looking to keep juices, just use a drip or foil pan.

 

No wrap on the brisket yesterday. Won’t be wrapping the next one.

 

Never had a problem with the bark - I just let it rest on the countertop. I wrap my brisket in butcher paper after it gets out of the stall, bring it to 203 and let that rest in a Cambro.

I thought about getting an old school smoker (I have a friend that offered to make one for me) but the pellets have spoiled me.

Same. This is why I ditched my offset. Checking the firebox every 45 mins to an hour sucks when you start at midnight.

 

I’ve proved to myself I can cook caveman style now I like the fact I can continue with life while food cooks.
