Alton brown is cool if you want to geek out, Haha I’m mainly hip to PBS type cooking shows, I know they’re are a bunch of hip new smoking personas, some of them I’ve watched but I’m not a fan boy. Hey grill hey usually pops up when I’m looking for smoking recipes, but she does all kinds of super tasty homestyle type dishes

    I usually add extra Mozzarella because I likes me some cheese.

    Chicken Alfredo Pasta Bake

    1 tablespoon olive oil
    3 medium chicken breasts cut into chunks
    Salt and black pepper to season
    1 teaspoon garlic powder
    10 ounces uncooked pasta such as cavatappi

    Alfredo Sauce
    ¼ cup unsalted butter
    2 teaspoons minced garlic
    2 tablespoons all-purpose flour
    1½ cups heavy whipping cream
    1½ cups 2% milk
    ½ teaspoon salt
    ½ teaspoon black pepper
    1 cup shredded Parmesan cheese
    1¼ cup shredded mozzarella cheese divided

    Preheat oven to 350°F. Lightly spray a 9x13 baking dish with cooking spray. Set aside.

    Heat a large skillet over medium heat until hot and then add olive oil.

    Add chicken to pan and season with salt, pepper, and garlic powder. Cook and brown chicken for 3-4 minutes on each side, or until almost cooked through (chicken will continue to cook in oven). Remove chicken from pan and set aside.

    While chicken is cooking, prepare pasta according to package directions until al dente. Drain and set aside.

    To the same skillet, butter and melt over medium heat. Add garlic and saute for 45 seconds. Add flour and continuously whisk for 1 minute.

    Gradually whisk in heavy cream and milk over medium heat. Once bubbles form on the sides, reduce heat to low, simmer and whisk constantly until slightly thickened, about 2-3 minutes.

    Add salt, pepper, stir in shredded Parmesan and ½ cup of mozzarella cheeses, and then remove from heat. Continue to stir until melted and smooth.

    Add cooked pasta and chicken to skillet and stir to combine. Pour into prepared pan and top with remaining ¾ cup mozzarella cheese. Bake for 15-20 minutes, or until mixture starts to bubble around the edges and cheese is melted.

    Cooks Country actually got me started with serious cooking. My mother-in-law would get the magazines and give them to me. I'd make the cakes on the back cover.

    Their online membership is $80/year and I'll probably end up renewing it but right now I'm telling myself I'm being fiscally responsible.

    I don't know what year that was, but;
    In my teens around 1976-1978, we were stupid kids driving around drinking cold duck, malt liquor, or Coors light.
    It was 18 years old to buy beer or liquor then, we had to go to several stores before no one would check IDs.

    We were never hammered, just having a few drinks and acting stupid as teens do.
    More than one occasion, maybe a few in those years, we'd get pulled over by the local cops or we would be sitting in the street hanging out drinking.

    The cops would check us out, see that we weren't shitfaced, just kids getting a buzz.
    They would make us pour out whatever we had and tell us to go straight home, as well we did.
    They didn't want to jack with the paperwork or ruin a kid's life.
    Probably more didn't want to do the paperwork.

    My later high school years, 1978 - 1980, we would drink SoCAL or Wild turkey and go to the opposing team's football victory dances.
    There was no ID check or chaperones back then.
    We would act a fool and no one there would have a clue to who we were.
    To this day I can't stand the smell of either and haven't drank whiskey since..

    To this day, I'm still acting a fool, ya'll have seen it..:thumbsup:

    I was lucky to grow up in such a time.
    Too bad I didn't learn from it, although I gave up liquor 18 years ago....:eek::cool:

    My wife comes from a family of great cooks - Paul Prudhome is her dad's first cousin; their family name was on the ships manifests when Acadians were expelled from Nova Scotia, so they're original Cajun - but I'm usually the person heating pots. However, every time she gives me advice or instruction, my taste buds thank her for it.

    Her sister shared her family recipe book in a Word doc when Mrs.TX and I were still dating; so I went to one of those web sites that'll build a book for you and put them all in a nice book. The second pic below is my set of paper books. I get most recipes off the net as well, but I bastardize 99% of them.

    Texas isn't as crazy as last year. But I'm keeping the truck safely parked in the drive. We have a nice thick layer of ice under the snow.

    Temp is just starting to drop here. We're knocking on 32 degrees but supposed to be in the 20's in a few hours. Then I'll bundle up, trek outside to check my freeze misers and spray some de-icer inside of my tankless water heaters drippy thing.

    Just went out and did a walk around to make sure the Freeze Misers are doing what they are supposed to. The temp dropped another few degrees and the sleet has picked up its pace. I grew up in Northern Michigan loving the winters but I have to say, I don't like them anymore.

    I haven’t heard anything yet, but my end of the state only got 7”. Boston area got the 2’.
    The storm was really windy, so most of the snow had drifted off my roof before this rain. It’s supposed to turn cold again overnight and give us a mix of crap tomorrow
