    The sandwiches were awesome. And yeah, I typically try to get them closer to 200 before I pull them off, just didn’t get it on the cooker early enough.

    I'm the same way - I have a Thermoworks Signals that I use to keep the smoker temp calibrated and when I probe, I do it towards the center while I watch the temperature. When the temp stops lowering and starts climbing again, I back it out to the coldest spot.

    Yeah I don’t think my inkberd probes are that quick to react, but normally I’ll just kinda visually lay the probe across the meat, and then pinch the probe were it’s at the edge of the meat, then turn the meat and try to center the probe and insert until my fingers hit meat. My brain can’t fathom or recalculate for a layer or two of foil or paper!
    I also brine so I don’t feel it’s necessary to wrap, full send, bark town USA!

    I do it the Aaron Franklin way. Mustard slather, salt and pepper (with a little paprika for color) the shit out of it and throw it on the smoker at 270. I don't look at it for three hours, and then I start spritzing with apple cider vinegar every hour until the fat cap cracks. Once it cracks, I spritz, wrap in foil, and probe it. After an hour, I increase the temp to 295. Take it out when it hits 205 and let it rest in the foil for an hour before pulling. They usually come out about perfect.

    Got an arctic cold front coming. I'm blaming @Outbound and @Cpl_Punishment, maybe even @SnowyTundra - seems like something she might do.


    Anywho, I'm using this as a reason to buy some new house slippers to keep my feets warm and I found a good deal on Ugg slippers on Amazon (the Uggs are rated pretty high and I NEEDS TO KEEP MY FEET WARM). They are red, but I can live with that for nearly 50% off. Maybe I'll take a black marker and turn them into ToyoMafia Scuffs...
