    One of my co-workers learned how to smoke a turkey when he was living in Louisiana. I think I'll invite myself over to his place for Thanksgiving next year.

    I do a southern-ish inspired Thanksgiving dinner though we do ham instead of turkey. Ham, grilled potato salad, cast iron mac&cheese, cornbread, caesar salad, apple or pecan pie and bourbon. C'mon over!

    Here's one I make - I add a pound of diced Boars Head Tavern Ham before I put it in the oven to make it a stand-alone dinner.

    2 pounds russet potatoes, peeled and sliced ¼ inch thick
    1 ¼ cups heavy cream
    1 cup chicken broth
    1 teaspoon salt
    ½ teaspoon pepper
    8 ounces sharp cheddar cheese, shredded (2 cups)

    Adjust oven rack to upper-middle position and heat oven to 425 degrees. Bring potatoes, cream, broth, salt, and pepper to simmer in large saucepan over medium-high heat.

    Reduce heat to medium, cover, and cook, stirring occasionally, until paring knife can be slipped in and out of potatoes with no resistance, about 8 minutes, adjusting heat as necessary to maintain gentle simmer. Off heat, gently stir in 1 cup cheddar.

    Transfer potato mixture to 13 by 9-inch baking dish, spread into even layer, and sprinkle with remaining 1 cup cheddar. Bake until bubbling around edges and top is golden brown, about 20 minutes. Let cool for 15 minutes. Serve.

    I didn't cook it today. I cheated on my diet plan and had a Baconator. As for the rest...you raise a valid point. I guess we can be thankful for being able to have such great cousins south of the line. :D

    There is so much variety, I’ve lost track of what animal I’m looking at.
    I can tell you, invest in good shades. I’ve had a nice set of Oakleys that shit the bed after 5 or so years, tried to be cool and got some pit vipers……. Their optics SUCK!!!!!! I literally have to take them off when I’m driving if I want to see any detail……….

    I also deal with a lot of pizza face……

    We used to do a similar one (with the ham) but add in good mushrooms (morels or chanterelles) and just cook it in the crock pot all day on low.
