Looks great! I don’t think I’ve had a white sauce either. I don’t use any glaze or sauce when I cook, but I’m open to trying new things.

I prefer ribs without sauce, so I always just do rubs. This is the first time I’ve done ribs or brisket without wrapping them at any point. We’ll see how it turns out. Not following any hard time table or temp on the ribs. Just going to see how well I do with the bend test.

I don’t feel like I’m good at briskets, so I mainly stick to pork, but I’ll smoke the shit out of a tri tip or some jerky, I also usually do reverse seared steaks using the smoker and gasser

 

Same. One of our favorite meals. We usually pull the pork and then give it a quick pan fry in the cast iron.

 

Carnitas nachos are also a staple in our house

 

All I can say about brisket is buy high quality cuts and stick to 225

 

I can get down with that as well.

Just pulled one rack of ribs. Dead on about five hours. When I picked it up in the middle with tongs the meat started breaking and looked like it would split. Allegedly that’s the sign it’s ready.



The brisket point still had another ten degrees to go. The other rack of ribs were an afterthought and didn’t get put on until 1:00 so I’ll check them in a couple of hours.

I like smoked fish dip, but I don't think I could bring myself to use snapper in it. That's what spot and croaker are for.
