I’m doing pork butt might throw on some fish as well.

 

Nice, I’m due for a butt soon, just did ribs on Thursday at work for a retirement party. Where I live we don’t get much fish so I’ve yet to smoke fish. Will you smoke those snapper?

 

Looking good. Yeah I’ll smoke a couple pieces for a dip it doesn’t take much. I hate to waste to much for a dip cause I could pickup store bought for that.

Thanks! I’ve only recently learned ribs, my parents didn’t do ribs ever. So at first I was just doing rubs and having great results without sauces, but recently I’ve been refining and tweaking recipes and trying new things. From a member on here I got inspired to do a Carolina mustard sauce/glaze……..wtf it was soooooo good!!! I’ve never even had a white sauce. And my other success was from store bought mango habanero sauce

spatchcocked drones, I mean yardbirds, are super good on the smoker too!

I think we shredded it for tacos that were stupid good. Usually a lot of our pork butt goes into carnitas tacos……..mmmmmm

you really need to try smoking a corn beef, then sorta crock pot like usual, then smoke bacon wrapped cabbage wedges……….I’ll look for the recipe

 

Yeah I smoked a brisket two weeks ago just for tacos. We do pork carnitas as well. I’d love to do that cabbage it sounds great.

 

So for the corned beef, smoke 4-5hrs at 175-200 then throw in the crock pot with one beer one stick of butter and water to cover, add your veggies for 5-6hours on low. Then add your cabbage in the last 45 minutes or so to your doneness.

The cabbage- the recipe I read calls for cabbages 1/4 but I think that’s to much cabbage to bacon ratio so I like to 1/6 or 1/8 slices, jam a pad of butter between the leaves and then wrap with one or two slices of thick cut bacon, smoke at 170 for an hour, then crank to 300
Until bacon is done and cabbage is soft.
It won’t disappoint
