    That makes sense. You definitely want stainless for a fillet knife, even in freshwater. What are the differences in set up needed for treating stainless?

    I can definitely see the use of the lanyard hole on that one.
    As someone said before, a fixed blade works well with one.

    Im sure he hangs it in a convenient spot.

    Learned this the hard way. Ended up getting rid of all but 1 of my carbon steel knives that weren't coated. Most of my collection is now S35VN / S45VN / CPM20CV


    BTW Ray, have you heard about the CPM MagnaCut that has recently come out? From what I have been reading up on it, it appears to be an interesting steel

    Hard to forge, so shaping is entirely by material removal. Also the heat treatment for hardening and tempering is excruciatingly difficult, frequently requiring exotic quench materials plus very little flexibility with temperatures

    Interesting, I learn something new everyday. I've only dealt with stainless in the welding trade and even there it can be a real pain.

    I don’t remember that one, I will check it out. The thing is that I’m a blacksmith not a machinist. I would love to tool up for machining knives and branch out into high end folders and use some of the modern “super steels”, but it’s a pretty damn big investment. The carbon steels I’m using are mostly 15n20, 1080, 1084, 1095, w2, & w1. All are very easy to forge and make Damascus with and they are relatively easy to heat treat with good solid results. Lots of the best knife makers and the best knives are using the same steels so I know I’m in good company. My knives hardness test at around 59 to 61, so they will stay sharp and hold an edge

    Yeah I imagine it is a pretty big investment. Definitely nothing wrong with those you mentioned, some of my favorite knives are in 1084 and 1095 but living so close to saltwater it is impossible to keep them rust free without oiling once a week. But yeah the story behind the “CPM MagnaCut” is pretty interesting. Here is an awesome article about it:

    That’s a good read. I think I will print a copy. It’s a good reminder that I stand on the shoulders of giants.
    A part of the problem people have with carbon steel knives is they want them to stay shiny. If you look at many older knives from 50 years and more old, they are rarely rusty but the blades have a dark patina nearly gray or almost black. The patina protects a bit from corrosion, and I think, also adds character.
    Most people aren’t aware of the different kinds and quality of stainless steels used in knives. The vast majority, especially the less expensive ones imported from China, indochina, and Pakistan are a grade of stainless that doesn’t harden or temper at all. Good for letter openers, lol.

    I’m thinking about something like this 7A8B7959-D4AF-473D-A1BA-42205C034A29.jpgI love hunting mushrooms and I don’t think I’m the only one. While making the Damascus knives I end up with some decent size remnants. Seems like this would be a good idea. I want one myself, anyhow.

    Here’s a picture of my blushing bride with a mess of chanterelles from last year. We can’t wait to get out there again! Morels, lobsters, oyster ‘shrooms, boletes, man they are really the way to make great pizza, lasagna, stroganoff, stews etc awesome!

    The Leek has a torsion bar spring assist. The heel of the blade forms a really low profile flipper tab that requires just a quick flick to start and then the spring finishes the work. I’ve carried (and lost) more than a few Leeks and Scallions (the little brother) over the years.

    Leek both thumb and assisted flipper switch/spring blade launch BUT the thumb stud is really small you have to really practice its more for lock when the blade opens.

    Anyone tried the random leek w tanto blade?

    Sometimes we just jibe with our co-workers. My medical assistant and I talk knives every day. He is moving on to bigger and better things. I'm pulling for him to get in to medical school and he will be awesome. Today, was his last day at work. He gave me this as a present. A 22 year old, sharp as a tack, patients love him, and he has always been rock solid. He made it at his home shop over the past few weeks. I'll carry it with pride. Thanks Jake!
