    2 more orders boxed up and will ship tomorrow. Wait til you see my packing job on the glass haha. Bubble wrap, styrafoam liners, peanuts. I feel like it's the 6th grade egg drop from the roof contest (which I won, lucky for you guys) I hope everything gets to you all safely. I have receipts and each box is insured for $50. I don't think it'll be an issue though.
    A few guys are waiting on the 8 and 12 oz bottles. Those will be filled up Saturday and ready mail after Easter. When those are full I'll post a pic of our full line-up.
    Thanks for everyone's support here. I didn't ever think this thread about my hobby would turn into this. In total I'll be shipping 11 boxes and still have a few on order waiting on me. You guys are awesome.

    Maple is an awesome tree. I build cabinet doors, wood tops and moldings for a living and use a lot of maple. Mostly red leaf soft and some silver leaf then hard maple for the tops. Maple is a closed grain wood so for me to think about how the sap can flow its seems amazing. Sean can you educate us a little bit more on this and if you use any of these species maple trees?

    Sap if definitely a bit mysterious. Is only flows for a few months per year. If it's too cold it doesn't flow, if it's too warm it doesn't flow. It stops once the trees buds are formed and a out to pop out leaves.
    Sap flows up from the roots and can move laterally as well, it does not flow down. It is found in the outer inch or two of a tree, not deep in the core. Sap is under quite a bit of pressure on the tree which is what makes it come out the hole and into my bucket, idk if they know why or how this pressure exists.
    We drill 1-3 small holes about an inch and a half deep and stick tap in there and you'd be amazed some holes put out 3 or 4 gallons of sap per day. This has shown to do zero damage to the trees.
    We tap when the sap starts flowing around February in CT. When the days are warm 40°+ and the nights are cold. You actually want the sap to freeze at night so when it thaws it's built up a lot and it has more to give. Sap is 1-3% sugar. Assumption is that the buds and leaves need this to start growing so they can do their job all summer.
    We tap sticky sugar maples but just about any maple can be used, silver, red, Norway, black....but sugar maples have the highest sugar content and the form buds the latest of other maples so you get a longer season from sugar maples.

    Thanks for taking the time Sean to explain the the sap! So im guessing when they process the trees for lumber, they cut off the outer sapwood. Also i have never heard of sugar maple for sale as a hardwood product so maybe they leave those strictly for syrup production.

    Thanks Steve. I'm glad you and wifey liked it. It really is a lot different than what you buy in stores. Every large maple producer uses a reverse osmosis machine to concentrate the sap before they cook. IMO that changes the flavor quite a bit.

    So I just bottled up about 14 more gallons. Did 8oz and 12oz glass flask today. We have about 30 gallons left to filter and bottle. Today went smooth, one thing that sucks is we had to do some additional labeling to sell at a retail store, my brother and I each found a small mom and pop store that wants to sell our syrup and each committed to a couple gallons, the extra labeling took some time but it'll be nice to have some cash for a bulk amount.

    You only need to refrigerate opened bottles. I'm sorry I didn't make that clear. My brother made the labels and didn't have that put on them. Definitely an oversight on our part. Next year I'll be sure to have that on there.

    Mailman just dropped it off. I like the packaging even though it's plastic. The glass ones looked amazing. I would have ordered more had I known multiple quarts fit in the box. Can't wait to try after I get out of work!
