Seasoning it is not a big deal. I've had it for about 11 years now. I only use mine for searing steaks and carne asada for a few minutes only at best so it's not hard to clean. I wouldn't fry anything in it though. I have done fish in it and it was a bit of a pain to clean. I had forgotten my flat bottom pans while camping one time. I only use flat bottom cast iron pans for frying chicken and fish now.

    I forgot about these....

A bacon press that I use for making Panini sandwiches (in a cast iron pan on bottom) or flattening out wraps. And a small Lodge pan that is used for a spoon rest

Big fan of our Lodge enameled cast iron mainly because of the rounded corners at the bottom.

Do LOTS of research before you buy anything... Lead leaching, etc.
Just cause its a cast iron doesn't automatically make it safer in the long run

Avoid cheap Chinese cast "iron". Stick with Lodge.

We got a few cast iron pans recently. I seasoned them using olive oil just because that was all I had. The newest one I used regular vegetable oil and that seemed to work better. I also have a griddle plate thingy that stays on my grill outside for grilling onions, veggies, carne asada and such. That was actually our first venture into cast iron and was harder to keep rust free but now I just keep oiling it.

Part of why I wanted to switch was from talking to the chefs at my office cafeteria. They strictly cast iron and they've seasoned the hell out of them. They can cook eggs in 30 seconds and wipe the pan clean even quicker. They all told me they prefer cast iron.

We are slowly designating my old bachelor life teflon pans to camp duty.

    @Darkness

If you cook over a campfire like me, be careful with any Teflon or T-Fal as it can break down over certain temps.

In time. We didn't get to camp this year for various reasons but I will be upgrading our gear soon. I get "the nod" from the wife because her sisters fam wants to join us next Summer. Can't use old crap when family is watching

You should try tripod Dutch oven cooking. Tripods can be had in different sizes. You can bake, cook stew, chili, braised beef, popcorn, all kinds of stuff over a campfire. It's kinda fun actually.

I'd like to see a good cast iron northwest clam chowder recipe. My friend up in AK made a great Dutch oven fresh smoked salmon chowder to die for. I had a great AK razor clam chowder up there too. Beats the east coast chowders hands down! Better clams, better ingredients! Chowder Wars!

Might as well post your cast iron recipes here too unless it's secret....

Here’s the everyday use part of my collection. Lots more in the shop that needs to be refinished. All vintage Lodge, Wagner, Griswold, Hanks, BSR, etc. Also some carbon steel and copper/stainless in the mix. It might be a bit of an addiction. I made the rack and hooks as well, benefit of being a metalworker.

Just to give you a guys a heads up....

If you ever vacation to Pigeon Forge/Gatlinburg, TN, there is a Lodge factory store. It is a few miles off I40 and it right beside Smoky Mountain Knife Works and Bud's Gun Shop. They literally have every Lodge product made. They also have special edition products you can't find anywhere else. Their new Lodge products are at normal prices.

In the back corner they have their clearance/factory blemish section. On the blemish section, you can not tell a difference at all but for some reason they were rejected at the factory. Inventory is always changing and you never know what you will find.

I found a huge pot with legs and handle that I use to cook pot roast or chili on the smoker. It is normally $90+ and I got it for $30. I got the fajita cast iron plates with wood that are usually $30. They were back there for $8 a piece. Last week ai was there I bought a bacon press for $10 and they had these little enamel pots for deserts or French onion soup. Less than 1/2 the price of the new ones. They have a tons of different skillets, Dutch ovens for cheap!

It is worth a trip if you are ever up that way.
