Not sure if it's just a coincidence, but shortly after I upgraded my pixel 3xl to android 11, I lost my Bluetooth calling. Streaming music over bluetooth works fine, but when I make a call, everything on the head unit looks normal, I can see the call is in progress but no audio.
Tried poking around the settings, but didn't see anything out of the norm.
I made sure the BT volume on the phone was up.
    Ideas?

Try deleting both the pairing on your phone and the Head Unit. Reboot your phone then repair both the phone and Head Unit. I have the new update as well with no issues.

So i updated the head unit (alexa works pretty well, happy with it) and unpaired both, restarted, re-paired and same thing. While i was sitting in the driveway i cranked the volume to the head unit while i was in a call, and could hear a tiny bit of voices coming out. Looks like its my dsp i need to mess with.

I have a pixel 3xl with Android 11 and have no connectivity issues or calling issues on BT. Just tested it to be sure.

Thanks fellas! I got it figured out. It was indeed my dsp. Long story short, i had my preamp output rca incorrect (front channels and s/w were swapped) and so when i was setting up the dsp, i couldn't get it to sound right, so i bandaided it and just used the rear channel output's for my fronts. I didn't even think about it that phone calls just come in through the front channels, so that was the issue.

You going to upgrade to the pixel 5? i've been thinking about it, but my 3xl is still working like a champ.

Same boat... 3xl is solid. No need for 5g yet.

Im really interested to see what 5g is like but I don't think it will really make that much of a difference. I'm not downloading big files to my phone or hotspoting the entire house

I have a Pixel 3. After the Android 11 update bluetooth calling was affected with my Pioneer head unit. If I try and make a call from the head unit, I know have to unlock my phone before it will place the call. I haven't tried repairing it yet.

I'll consider upgrading to the Pixel 5 when I see better prices on Black Friday. The 3 is still solid. No need to upgrade.
