    5100s all around, 295-70-18 Defenders, 1.25 Spidertrax spacers, BD reverse lights, de-badged, interior LEDs, footwell LEDs, reverse LEDs, ARE cap, front receiver hitch for cooler holder, cooler holder/rod rack, backup camera, Kenwood HU, Westin nerf bars, Husky floor liners, folding rear seats, remote battery posts, plastidip grill chrome, Powder coat bumpers.
    For this, sprinkled some kosher salt and let it sit in the refrigerator overnight. Not trying to be a dick, but I've never found a tenderloin that was tough. Dry brine overnight, dredge in flour with some black pepper and saute in your oil of choice. Do it with the meat sliced in 1/4 inch medallions, or wrapped in bacon whole.

    Smoked hot wings, corn on the cob and pork steaks. Gonna let the pork steaks smoke a little while then turn the heat up and smother them in some bbq sauce and green chili.

    My first crack at pork belly. Decided to just smoke it like a rump

    Rubbed last night. On at noon. I'm hoping 4-6 hours, them rest, slice or shred and serve on buns like pulled pork.

    13lbs from Costco. Stick burner using oak.

    Anybody have an amount of time to thaw a bone in pork shoulder? I searched the web a bit and found a 4-5 hour per pound guide. I just got a pork shoulder in today from SRF. Its frozen which is good...problem is trying to figure out how I am going to thaw this thing now.

    I need it to be thawed by Monday around noon. I have a few hours to play with after that in case it isn't ready.

    Worst case I could just unload part of my fridge into a cooler while the shoulder thaws from now till monday morning.

    Would rather just unload the dry ice and shoulder into a cooler and bring that cooler in the house to help control the temp then transfer the shoulder to the fridge Friday evening and let it stay there till Monday.

    Got a Pit Boss pellet smoker. Here are a few of my creations beyond the usual meats. The first is a peach cobler that will make you slap yo momma for doing it wrong. The second is a shrimp boil in a Dutch oven, also super good. Both in cast iron.20200703_202945.jpg

    Love the ease of use with pellets but wish I could get more smoke flavor. Been using mesquite but the mix is low. Anyone know where to find 100%?

    We’re gonna be butchering a couple pigs this fall. Does anyone on this thread have experience with making bacon? I’m okay with using formula methods for brining and smoking but would be interested in getting suggestions from anybody that has real experience.

    I almost missed your response.
    That thing was huge. I ended up leaving it in a cooler with the dry ice the first night. Then into the fridge for the second night. That next morning it was still frozen like a rock. It was just a hair under 20#’s though. The third night it was left out in the sink. Then back into the fridge. Worked just fine. If I had enough time/space I would have just left it in the fridge the entire time.


    Since we are talking about it....

    Made some ribs last night. They were amazing; probably my best batch ever. The smallest ribs were on a hot spot and slightly over (hence the bone sticking out), but still super moist and tender without being mushy.

    Leftovers are going to be good this week. Pretty sure I'll make an omelet tomorrow morning some some rib meat.

    Smoked a brisket Sunday night...

    Used some all-purpose rub I bought in TX a few months ago and then let it rest in the fridge for about 6 hours. It was good, but think just straight salt and pepper is better. Started as a 17.5lb slap of Prime, but I had to trim it down a lot. I think the cow when through the machine backwards. Probably closer to 14lbs when I was done.

    Took about 8hrs to get to 170 degrees, then wrapped it in pink butcher paper. Reached 200 degrees 7hrs later.

    Made street tacos tonight...chopped up some brisket, leaving a thin line of fat on the meat for some extra flavor. Had goat cheese, a shredded apple, cilantro, avocado and hot sauce to mix and match.

    I can second this. Pit boss from Lowe's. Same product, lesser cost. Support is awesome from Pit Boss. The only qualification I can add is that I have a vertical smoker, not a grill/smoker. The only drawback I've found is that the pellet poopers don't give me a smokey enough flavor. A $10 smoke tube puts me right, but I can say, friends and family think most things are good without the smoke tube.
