    No I'm not Canadian. I am from Connecticut and have been making my own syrup on and off since I was 10...so almost 25 years.
    Does anyone else do this or have an interest in it?
    I recently got back into it a few years ago after a 5 year lay off due to life happening.
    This year my brother and I purchased a full set up for 100-300 taps and are just about done getting everything set up. A lot of work I tell you. We will be tapping trees all week starting tomorrow. I'll post some pics of the sugar house build and the process for anyone interested

    UPDATE: SYRUP IS FOR SALE
    Prices as follows
    3.5oz glass maple leaf
    8oz glass flask
    12oz glass flask
    16oz glass jug
    32oz plastic jug

    **REFRIDGERATE AFTER OPENING**

    SHIPPING: so far i have only used USPS flat rate shipping. It's $13.60 for a medium box and 18.85 for large. If you have a hookup on shipping and want to email me a prepaid label then that's great, I know shipping costs suck.

    HOW MUCH CAN I FIT IN A BOX?
    This depends on what you want. I can fit 2-3 quarts in a medium and 4-5 in a large. Those are plastic. When it's glass I need to pack more carefully and it's 2 pints per medium and 3 or 4 per large. I have not packed any 8oz or 12oz bottles yet but they are flat and I should be able to fit more. The maple leaf bottles are really fragile and take up some decent space. PM me if you have questions, I'm willing to do a dry fit when I have time, to maximize your shipping costs.

    **REFRIDGERATE AFTER OPENING**

    Fine print...if you have children do not leave them alone with this syrup, or allow them to pour it themselves on pancakes, waffles or even French toast. I recommend hiding it near some vegetables in the fridge. I have a 5 year old...trust me... they WILL eat it all. You will have no more left, you'll need to buy more, they will then eat all of that and ask for more. They will then be addicted and you'll go broke trying to afford this until they are 18 years old. I assume no responsibility for any of the above issues :)

    Got all the equipment with no place to put it. Contemplated building a shed but was cost prohibitive. Decided to renovate an old sheep annex turned work shop of my brothers barn to use.
    If anyone is interested in knowing about the equipment I use let me know.
    Anyway the area had a plywood floor over gravel and sand. That wouldn't work with thousands of pounds of evaporator, fire brick, sap and syrup sitting on it. Ripped up the floor, used the tundra to haul 8000 lbs of stone process and sand to the site. Used a few pallets of free brick for the floor.

So you need a cupola to vent it all. Kinda tricky because if the area I'm using but I sure hope it works. Got some rough sawn wood to match the existing structure and built a cupola with 3 doors to vent steam. Will allow to vary which doors depending on wind direction. Did this in the fall before it got too cold to deal.
    Next was the smoke stack. Big 18" hole for 12" pipe. Found some flashing and went for it. Came out good.
    Also made some brackets to hold a gravity feed stainless sap tank, dry it's probably 150 lbs, full of sap its over 700 needed to be beefy but will use dead men studs when it's in use. Need to finish up the rough sawn wall and sliding barn door

    Evaporator lined with firebrick and pans on.
    It's a 2 foot x 8 foot Leader wood fired evaporator with 2x6 foot raised flue rear pan and 2x2 front finish syrup pan.

    Yes I do sell it. We produce about 30 gallons per year that we sell. I was lucky to find a local store that sells a decent amount for us

    I can sell it for less than normal if I get a few orders. Just a warning it's not cheap and I have no clue on shipping. I'd also feel better shipping plastic only but we have time to sort it out.

    Here's our filter press and bottling cooker. Everything is filtered and bottled at >190°. FDA standard.
    Syrup is cooked to 219° and tested with a hydrometer for proper viscosity before bottling.

    We have a reverse osmosis machine that we may use down the road or sell. It concentrates sap from 3-5% sugar to up to 20% for decreased cook time. Problem is we would need to quadruple the amount of taps we use to make it worth while. Meaning more collection of sap which is the real labor and time during the season

    Mike Rowe had a good episode of dirty jobs explaning how syrup is made if anyone wants to see the process there too. It's pretty cool the process of making the syrup.

    If you have sugar maples. Or any maple trees really and the right weather...you too can make syrup. 1 tap can yield about 1 quart of syrup per year

    That's what i'm hoping for... but you'll need to keep us well stocked, we go through about a quart every 6 weeks or so according to Wife.... Looking forward to trying the good stuff!

    Successful test boil with water. One little leak that we fixed easily. Everything is ready to go. Just need the weather to cooperate now
