I am new to the Tundra family looking for ideas to build my 2017 Tundra Crew max. I do a lot of hunting and off road driving.

Welcome. A couple of things to consider as you plan to go off the beaten path.

Offroad supplies: Start building up your emergency kit. There are a couple of good threads on what to carry so I won't iterate the whole thing here. At the very least you should have the means to call for help should you become stuck or stranded. Check out the inReach Explorer for example.

Storage Options: Look into storage options for these supplies. My personal favorite is the Undercover swing box which tucks in behind your wheel well. There are also a couple of good under-seat storage options for your Crewmax.

Lighting: Decent off-road lights are a must, but don't just think about what's in front of you. Consider rock-lights for the sides, and some really bright reverse lights.

Tools: Our Tundras are huge when compared to many off-road vehicles. If you care at all about your paint, carry a decent pruning saw, a machete, and heavy duty hedge clippers. You'll thank me.

Is the big aluminum deal in the bed of the truck a dog kennel or something? So what kind of off-road capabilities do you need to do with your truck?

Hello Kevin and welcome from San Diego. Nice looking truck. Just for starts maybe a little larger all terrain tire for going off the path when hunting. That's a beauty of a on-board dog kennel. Does it have a big screen tv for the hound dogs ? Hope they appreciate the new ride. Enjoy !

What are some additional light options. I have a 50 inc h curved and 4 ditch lights going in. Have new winch and bumper ordered and fog lights for it. What else?

You can add a roof rack and then the light options are almost endless. Rear bumper lights, rear hitch mounted lights, LED bulb or replacement LED fog lights and much more if you want.
