    As the title states, who here has a good chilli recipe? The current recipe I have works. But it's pretty basic, with tons of canned beans, pre packaged chilli mix, etc.

    So if you've got a good homemade chilli recipe, post it up!

    Have you tried the “Over the Top” chili that was going around the web last fall? I didn’t get to try it so can’t say it’s good for sure…but hard to believe it wouldn’t be.

    Westin Winch mount tray w/ custom light bar, avs hood deflector, 3” lift, badlands winch w/ wireless remote, bed stiffeners, Toyota Predator steps, Husky Floor liners
    I use seasoned (McCormick steak seasoning overnight) flank steak grilled. Then cut it into small bite size pieces. Usually two or more cuts depending on how meaty you want it. Then chicken or beef broth 1 box. Then mixed chili beans (hot) and light red kidney beans. I season with mrs dash and McCormicks chili seasoning. One small can of unsalted tomato sauce. Then put the crockpot on high for several hours then turn to low for a few more hours. These tenderizes the meat so it almost disappears.

    Ive never made the same chili twice. But i kinda make 3 chilis at once. Like the first is extra fatty ground beef, tomatoes, and carmelized onions. then cubed steak, sauteed peppers and veggies, and a spice dump. then special meat like brisket or elk, spices, and some brown sugar. Sometimes half a bottle of shiner…

    and i serve beans, cheese, and fritos seperate.

    Ingredients:


    2 lbs either extra lean ground chuck

    health choice use buffalo

    2 - 3 pounds of sirloin or strip steak

    2 yellow or sweet onion

    1 red onion

    1 white onion

    ¾ cup Chili Powder

    ¼ cup Cayenne pepper

    1 tsp Cumin powder

    1-2 tbls of fresh ground pepper

    Butter or your favorite alternative (used to saute onions & ground beef)


    6 -8 cans of diced tomatoes

    health choice: Fire roast fresh tomatoes on grill to remove skin then stew tomatoes over medium heat for about 45 minutes (you may have to add some water & a tbls spoon of white sugar and salt to taste).

    2 cans of Rotel “chili fixins”

    2 cans of regular Rotel

    1 bag of bakers semi-sweet or 4 of the wrapped bakers chocolate squares

    4 fresh Jalapenos -- fire roasted remove skin and enhance flavor.

    3 tbls of diced garlic I use the one sold in the jar. (if you use fresh garlic just use 1 whole clove)


    3 cans Kidney beans low sodium

    2 cans pinto beans low sodium

    2 cans black beans low sodium


    Steps to Preparation:


    1. Steak preparation:

    2. Rince steak under tap water and dry.

    3. Let steak sit out at room temp for about an hour.

    4. Make sure steak is dry (I use a kitchen towel)

    5. Use glove or suffer - Coat one side of steak with a heavy amount of chili powder and rub in. Coat the other side with cayenne pepper and rub

    6. Grill over flame until Medium rare or Medium (don’t cook over Medium well)

    7. Place in covered container in fridge for at least 6 hours.

    8. Great time to Roast jalapenos and tomatoes




    Onion Preparation:

    1. Dice all the onion and saute with butter. at the end of the saute put in Garlic and black pepper.

    2. As onions saute cut up chilled steak into ½ inch cubes, set aside.

    3. After onions are done remove from pan and now the pan will be seasoned for the ground beef.

    Beef Preparation:

    1. Brown beef and add some chili powder and cayenne pepper.

    Take all the Tomatoes, Meat, onions, jalapenos and chocolate and mix together.


    cook for at least 4 to 6 hours in crock pot or dutch oven at a low to medium heat 4 to 6 hours stirring about every 45 minutes.


    Rinse beans in colander and add to chili cook for another 15 to 30 minutes

    I do - I won the first Centex AMVETS Chili cook off with it. It has beans and prepackaged chili mix though... but it's super easy and tastes amazing.

    2 pounds ground beef
    1/2 onion, chopped
    1 teaspoon ground black pepper
    1/2 teaspoon garlic salt
    2 1/2 cups tomato sauce
    1 (8 ounce) jar salsa
    1 packet Williams chili seasoning
    1 (15 ounce) can kidney beans

    For the salsa, I use Pace Picante and I also blend it in a blender. You can alter the heat this way (Mild, Medium, Hot)

    In a large saucepan over medium heat, combine the ground beef and the onion and saute for 10 minutes, or until meat is browned and onion is tender. Drain grease, if desired.

    Add the ground black pepper, garlic salt, tomato sauce, salsa, chili seasoning mix and kidney beans. Mix well, reduce heat to low and simmer for at least an hour.

    Hint: plenty of pureed veg all or other canned mixed vegetables along with a 46 oz can of V8 juice gives a good chili some healthy goodness and if you get a good ratio mixed it gives good texture and cosistency. Every smart Tundra guy likes his V8!

    Sounds good but only chili powder to this chili.

    Red chile pods soaked in water blend to sauce add garlic until taste buds explode.

    Different regions of the U.S. have different ways to make chili, so you are technically correct, but chili without beans, is just basically eating a meat sauce, which is totally fine also, if you like that. ;)

    Chili is easy. You really don't need a recipe and can make the shit up as you go.

    Hot tips; Add 6 oz strong coffee, a few chunks of chocolate, and fresh grind your "chili" and other spices, don't use that pre-ground shit in a plastic can. Toast your peppercorns before grinding.

    If you want a challenge, go shoot an elk. Too much of a challenge? Use beef... but make osso bucco out of the shanks. Best meal I have ever had and it amounts to hot meat in warm red sauce which is essentially chili.

    Lots of good ideas on here, just pick your favorite from one or a blend of these recipes. One thing we’ve started doing, take the meat (we use venison and medium hot sausage) mix together and make a big patty. Put it on the smoker along with the vegetables, smoke until done and then add too the chili mixings.
    Adds a next level taste too your chili.

    The wife and I make a couple gallons at a time. Divvy it up into containers and put it in the freezer for future meals. Just pulled one out Tuesday, polished it off yesterday lol As good as it was when it went in the freezer.
