    Beef ribs are in the smoker. Salted yesterday, dry rubbed with spices today (I can’t recall what all I mixed together, made the spice mix weeks ago) and now mesquite smoking.

    New to smoking, my wife gave me one for Christmas. Tried it once but had a hard time maintaining consistent temp in the cold, and had issues with wind burning up my chips too fast. Been doing lots of reading, made some modifications to the smoker and I'm looking forward to trying some things now that the temps are changing.
