    It’s a 6 pounder. I’m thinking it should be fine, but we’ll see. Worst case scenario we do leftovers tonight and this is ready to go for dinner tomorrow.

    Came out okay, but I think the temp probe tricked me. Probably wasn’t actually to temp and I just found a hotspot by the bone or something. Most of it pulled ok, but there were several tough parts.

    Tastes good at least!

    I meant to ask you about that (the probe touching the bone) when you said it spiked but I was cracking pecans and forgot. I usually wait for the fat cap to crack, give it a final spritz, wrap, and then probe. I also cook it to 205.
