Tamales!

    Each family has their own recipe and versions on how to cook this seasonal staple. I am a transplant from Arizona to Georgia, so I've had to modify my family's recipe a tiny bit due to supply differences.

    I'm also the only one that makes them, so whenever my friends ask me to "whip up a batch" I glare at them until they go away. This process is time consuming!

    Ingredients:
    Masa Flour
    Lard or vegetable shortening
    Broth
    Salt
    Corn Husks
    Roast (or chicken breasts)
    Enchilada Sauce
    Whole Black Olives (pitted)

    Step 1. Throw your meat of choice in a crockpot with the enchilada sauce. Cook on low for 6-8 hours until it falls apart.

    Step 2. While meat is cooking, soak corn husks in hot water to make them pliable.

    Step 3. Prepare Masa. Mix flour, lard, and broth until mixture is slightly sticky. (Masa flour will have direct prep instructions on the bag.) Add salt to taste.

    Step 4. Shred the meat, and add olives. I'll simmer them together with another can of enchilada sauce while prepping the masa, but that part isn't necessary.

    Step 5. Spread masa on lower half of corn husk, place a portion of meat in the middle and roll husk around it, forming a sort of open ended corn husk burrito. Repeat this process until out of supplies.

    Step 6. Placing the open end up, steam a dozen or so for immediate consumption (about 20-45 minutes) Immediately freeze the rest. (Gallon sized ziplock bags work best for this) When ready, steam the frozen tamales for about an hour before serving.

    Remember to remove the corn husk BEFORE eating!

    I'm from the Rio Grande Valley, in deep south Texas. We always steamed our tamales. I now freeze my tamales, 3 or 4, in ziplock freezer bags, as I do my ribeyes. Defrost with the bag submerged in a container of hot tap water. Unzip a short portion so the hot water can push all the air out. To heat a single serving, I wrap them in soaking wet paper towels and zap 'em, steam keeps them soft. Cover with Wolf Brand Hot Chili and chopped onions. Pop open a cold Topo Chico. Kick back.

    I love tamales! One of the few things that I miss about moving from AZ to OR.
    Best I ever had were made by the wife of my labor foreman in Morenci (was there for a year, restoring an old courthouse).
    Every 2 to 3 months I would stop by their home and deliver her a couple pork roasts. I never asked for tamales, lol.
    The wet paper towel wrapped tamale in the microwave works perfectly well!

    Love me some Tamales. Unfortunately I have to buy mine. Pick them up from a James Beard award winning tamale shop in Yakima, WA whenever we pass thru.

    I had nearly 300 in my freezer at one point…

    My grandmother had a standup freezer that was usually full of them. Wasn't hard to make that many when the entire family came together for it.
