Started smoking a brisket this morning on the BGE.

    First time I'm trying a smoked brisket on the BGE.

    6.78 lbs prior to trimming obtained from Costco in vac sealed bag.
    Dry rubbed with John Henry's Mojave Garlic Pepper.
    Set BGE to 250 degrees with Flame Boss 300 WiFi.
    Conveggtor in place from start, and drip pan on top of Conveggtor, steel grill on top of Conveggtor.
    Added Western Mesquite cooking chunks to top of the fire pit for smoke.

    Placed brisket on the steel grill for 4 hours at 250 or until 160 degrees internal temp.
    Will be turning brisket over at 4 hours, and placing in double tin foil wrap with 1 cup of apple juice.
    Will seal juice in tin foil for another two hours in BGE or until 200 degrees internal temp, and or fully tender with fork test.

    Will rest for another 30 minutes prior to cutting cross grain.

    Update:

    When the temp reached 150 degrees, I turned the brisket over and waited again til it turned 160 degrees. The 150 mark for this just under 3 hours. The 160 degree mark was just under 4 hours.

    I then pulled it, wrapped in double tin foil, and poured room temp 1 cup of organic (Trader Joe's) apple juice on it, and wrapped it back up with the probe.

    I continued to cook until 200 degrees internal temp.

    After it reached 200 degrees, I pulled it from the BGE still wrapped, and let it sit for 45 minutes closed up on a platter in the house.

    After 45 minutes, I opened the foil up and pulled the probe.

    Going to let it sit open in the platter and foil for another 45 minutes, or until warm to touch.

    Nice. I did some salmon on the bge today. It's almost hard to mess food up with one. Haven't tackled brisket yet though.

    BGE is by far the best cooking appliance I've ever had. We cook everything from pizza to oysters, to brisket on ours.
