    Boneless skinless chicken thighs.

    normally not a fan of chicken thighs but I thought I would give this a try and was I surprised

    the marinade/sauce was given to me by secret Santa. I must say it surprised me. It is great. I liked it.

    Egg temp was 400. That’s wheee I like to grill chicken, burgers brats etc with about a 1/3 of a load of lump. That seems to give the right temp and distance from the cooking grate.

    The only time I'm a fan of thighs is off the ceramic or in butter chicken.

    Ya not a big fan of chicken thighs but these were pretty damn good, I ate 3 of them LOL.

    I pretty much only eat thighs if I'm having chicken. I find the breasts dry regardless of how they're cooked.

    The egg is awesome.
    Saturday was boneless skinless thighs also, and some lamb chops.
    Tonight I had pork chops.
    My favorite is lamb chops and brats, and I then also make a tomato&onion sauce that goes on grits, with that.

    Wow that all looks amazing!We’re still learning but we got the Neapolitan pizza down pretty good ,can’t beat the egg for that and it’s a total kick to have everyone over and crank out pizzas on a weekend.Bought the PS Woo from the ceramic grill store and it is awesome too.

    Well shit, I guess ill share my most recent smoke....
    Woke up at 4am, threw on a 20lb prime brisket and smoked it for 12hrs. I followed Aaron Franklin's guide from Masterclass. Best brisket I've ever had.
