    I always wanted to build a brick pizza oven, but just never got around to do it and don't really have a good spot to put a big dome oven in the backyard.

    My family have had different pizza ovens over time that have just kinda been so so. Ones that sat on top of a gas grill, stand alone propane ones...none that were really that good. I have a Big Green Egg that does a good job of pizzas, but doesn't really get the toppings well done.

    My brother bought my parents a Ooni Fyra12 that uses pellets for the fuel and works great.. We all have Traeger's, so pellets are readily available. I had the idea of bringing a pizza oven when we go trailer camping and i always bring a portable Traeger, so pellets would be the perfect fuel.

    I came across a deal on the Ooni Karu 12 dual fuel oven. It will run on lump charcoal or wood, or you can buy a gas burner. Since i have a Big Green Egg, lump charcoal is always on hand. I jumped on it and a few days later it arrived.

    I'll eventually try to find a stainless steel cart that can sit next to the kitchen and can wheel it around.

    Its a pretty cool design, there's a fire box in the back that you remove and put your fuel in and light it up.

    After about 15-20min its good and hot and ready to rock and roll.

    A trick that i read about is to put on a piece of hardwood a minute before you put the pizza in to get a strong flame so that the pizza toppings get done to perfection.

    Turned out great. I still need to perfect my skill at ejecting the pizza off the peel as it kinda stuck and swirled the toppings around.

    Looks amazing.

    We use an aluminum peel, cornmeal and semolina flour dusting, to keep the pie from sticking and easily slide around....work fast, so it doesn't weigh down and stick.

    I've tried using cornmeal before, but it has a tendency to burn.
    I just ordered a wood peel, i've read that you can really work the 00 flour into it and be able to get it really slick.

    Speaking of aluminum peel, i forgot to add....i ran into this problem (whatever the opposite of a hotdog down a hallway is.....golf ball through a garden hose?)

    Round 2 today. Getting the hang of it.

    I realized that lump charcoal will only get up to about 500 in the oven. I made a bed of hot coals, and then switched over to wood....got the stone up to about 750deg.
