I thought you fell off the edge of the earth, and I was destined post pics of my Briskets and Turkey Breasts without your comments. Welcome back!

    Slab of ribs.

    Lots of yellow mustard

Good coating of webers original smoking rub

BGE warmed up and holding 250-275

    Oak, hickory and apple wood

Smoke for 3-1/2 to 4 hours or until you get good bone pull thru on the end and the slab passes the bend test.

    Slice and enjoy.

No wrapping, no spritzing just time, temp and smoke.

This is basically what I do as well. I use hickory or pecan. I have a smokin-it electric smoker. I set it to 225. I target 190-195 to pull them out. I tried the 321 method. To much work for me with similar results. My daughter is on rib kick right ow. I’m smoking em every week lately.

    Too many, but not enough....
Looks awesome! I just smoked a trip tip over the weekend, turned out great this time. Pretty new to smoking, havent tried ribs yet, just a brisket and some tri tip.

Did you let the ribs rest some?
