    Gonna smear on a rub of one bottle of Italian dressing, 1/2 cup cayenne pepper, 1/2 cup of black pepper, 3 tbsp garlic powder, let it sit overnight in the fridge, then deep fry the sucker!

    Will be smoking the turkey on the traegar for the first time this year!!!!
    Purchased the bag of wood pellets, rub and brine. Will be following the traegar steps to get it cooked unless I see a better recipe out there.

    Ditto on the Panera sourdough. I do a traditional stuffing. I make for myself.....fresh Washington state Oyster dressing. The bomb...Will smoke some Vermont white extra sharp cheese. Bought some fresh Quahogs to use for my homemade clam dip to eat with my homemade chips while I watch oppressed multi millionaire football players take a knee on Thursday. Oh.... And lots of Coors.....

    8 cups cornbread cubes
    1 1/2 cups celery chopped
    3/4 cup onion chopped
    16 oz oysters
    1/2 cup butter melted
    2 t salt
    1 t pepper
    1 t ground sage
    1 t poultry seasoning
    1/2 t thyme
    1/2 cup evaporated milk

    Heat milk, butter and oyster liquid in a small pan
    Combine bread cubes, celery, onion, specis and oysters
    Add liquid and stir
    Stuff bird or place in a greased foil lined baking dish
    Bake 350F for 1 or or until the bird is done.

    Notes from me. The original recipe, from my wife's grandmother, calls for canned oysters. Living in oyster paradise, we use either fresh shucked and jarred oysters or get them in the shell, depends on what else is going on with everything else. Corn bread is best if home made and left to get a little stale, but store bought is ok, any bread cubes/stuffing mix will work. The original recipe calls for sauteing the oysters, I prefer to put them in raw then cook with the rest of the stuffing. Just me, other than sex and catching fish, eating the rawist oysters available is one of the best pleasures in life. And canned, jarred, fresh shucked or in the shell shuck them your self oysters will work.

    I always use the wife I picked up back in the early nineties. I’ve had to do some maintenance and a few repairs, but she’s still got most of her original parts, and has held up surprisingly well over the years. Have yet to find anything that makes a better turkey.

    Well I decided on cooking the bird in the oven today. One of the main reasons is memories, the smells that cooking the meal brings back are good memories of happier times when mom was still around.
