This is one of my favorite desserts and it's very simple. The recipe is on the package of chocolate waffle cookies but here it is..
-1 box of chocolate wafer cookies
    - Homemade whipped cream
And you just stick all the cookies together with whipped cream, then cover the log with more. I shave up some chocolate or one of the cookies on top. Refrigerate several hours or overnight so the cookies get soft. Cut on a DIAGONAL and enjoy.

Variation is to add a spoonful of instant coffee to the whipped cream as your beating it. This makes the log a mocha log with is amazing, I'll top that one with crushed walnuts.

Looks good. Do the waffers soften with the whipped cream?

Yeah they turn to cake pretty much. Definitely needs at least 4 hours in the fridge, longer is better.

Its like dunking oreos in milk but not as sweet. I guess you could sweeten it with more sugar in whipped cream but I use about 2 tablespoons of confectionery sugar in my whipped cream and about 3/4 pint of the whipping cream. If you have a long enough dish you could use a full pint of cream. I ended up with quite a few cookies left. I'll make a mocha log over the weekend. All in all it costs around $6 to make it which isnt too bad.
