    You going to use a smoker or dehydrator?

    I've done a bunch of batches of jerky on the traeger, but a local butcher makes some of the best f'ing jerky I've had. It's almost translucent and super juicy and oiley. The stuff I make in the traeger is dry but amazing smoke flavor. Anyone make some great juicy jerky recipe?

    Dehydrator, old faithfull nesco I have had for about 20 years or so, cant tell how much jerky that thing has cranked out

    Its way to windy and half the state is on fire, so no cooking with fire or smoke outside today, hopefully this evening things will calm down if not maybe on night next week I can cook off this damn brisket
