Anyone Doing Sous Vide?

    I have fallen in love with cooking sous vide. A great steakhouse now only makes "decent" steaks compared to my home cooked stuff imho.

    1. Vacuum seal ribeye + kerigold butter + sprig of rosemary + a few sprigs of thyme
    2. Cook in water bath at 130F for ~2 hours
    3. Remove from water bath, set aside herbs, salt and pepper steak
    4. Heat canola oil in rippin' hot cast iron
    5. Add steak, TBSP Kerigold butter, 2 whole cloves of garlic, rosemary and thyme
    6. Cook for ~1m per side while using the herbs as a basting brush and basting the steak with the butter/oil.

    Perfect medium rare with no need to rest.

    I just ordered a 900w bluetooth+wifi Anova Sous Vide. I've wanted one for a while but never pulled the trigger.

    Has anyone used one of these before?

    Immersion cooker. You seal your meat in a bag (lol), and put it in a pot full of water, attach this thing to the inside and set it to whatever temp you want your meat at.
    Take the meat out and sear it (i've seen some people use a torch) in the oven or grill and its supposed to be super juicy.

    These things are amazing! Perfect gadget to add to the kitchen. I'm actually going cook some salmon today in it. Sure you can always cook the food the traditional way but with this method the food is always cooked to the temp and is never over cooked. I cooked steaks, chicken, fish, burgers, and even ribs in them. All of them came out great.

    Cook in soups vide bath st 119°f with your choice of seasonings for 1-4 hours and finish with a blow torch 3200°f medium rare. MMMM!

    Yeah so if a perfect medium steak is 160 then set the water temp at that and it’s impossible to get the meat over that temp. I have never used one but had a friend that was obsessed about this years ago. I personally don’t care if my steak has a gradual change from medium inside to seared on the outside. These things basically it’s medium 99.99999% of the way through. He used a blow torch after it was done to carmalize the outside.

    Wouldn’t mind trying a steak that way before I decided to buy one plus there is the extra cooking time it takes.

    Edit I just guessed at the temp.... it’s been a really long time since Culinary School.

    I think there is more to it than just the temp, it is supposed to break down muscle fiber and also helps infuse the steak with your seasonings. My steaks are always tender and delicious.:hungry:

    Oh I don’t doubt that for a second. By cooking at a low temp you are 1. Physically limiting the the meat from going over medium and 2. Slowly warming the meat so that it takes the seasoning better then if chilled. Basically marinating it for 1-4hrs at 130 or whatever degrees vs in the fridge.

    Again I wouldn’t mind trying one before I drop $130 bucks on this cooker. But I don’t have hours to cook food most times. Not to mention I can hold my own on the grill.

    Not everything takes hours. You can sous vide anything. Eggs, fish,steak, veggies, endless possibilities.

    I guess that is true. I should note the only thing I like in that list is steak lol. Super picky eater.


    Also I have to admit that heater is a great idea. Didn’t you use to have to monitor water temp way closer with a meat thermometer and constantly add new warm water?

    Sous Vide is awesome for a lot of different types of meat (and probably other food items too). I bought the original Anova submersion cooker on sale for $79 on Amazon. I think that it really excels for cooking cheaper / tougher cuts of meat. I did a Sous Vide on a pot roast and when it was finished it turned out a lot more like a prime rib than a pot roast. It's also great for tri tip, pork tenderloin, pork ribs and steaks. To me, all of the meats need to be finished on a grill / smoker after the Sous Vide to sear the meat and give it the right appearance and texture. The great thing is that the meat is cooked perfectly in the Sous Vide and the final grill / sear / smoke gives ends up finishing the cook just the right finish.

    There are several websites that show photos of the finished product (meat) for various time and temperature combinations. You can find the picture that looks perfect to you and set the cooker for the time and temp that coincides with the picture and your steak will be cooked to look exactly like the steak in the photo.

    My neighbor did porterhouse in it. I thought he was nuts to "boil" beautiful porterhouse in a bag in an igloo cooler. My skepticism quickly changed to bliss when I tasted one of the best steaks I ever had.

    I've had one for two years now, and it's a great way to make a steak or chop, or as mentioned above, make a tougher, cheaper piece of meat much more enjoyable.

    Regarding cooking times, it does take a while, but your timing doesn't have to be exact. If I know I want to eat a steak for dinner, I can throw it in some time during the afternoon, take it out and seer anywhere from 1 to 4 hours later depending on what the day brings.

    Cooking it in vacuum is what keeps the meat so moist.

    My favorite way to sear is to use a charcoal Chimney starter. Fill it up and get it blazing hot. Put a grate over the top of it, and show the steak that heat. Works really well.

    meat was ridiculously tender and it really brought out the seasonings a lot more. I did miss the smoke flavor from cooking steaks on the big green egg.
