    started it this morning at 8. It’s hit the stall at 169.
    Time to wrap it up for a nap.

    Do you have a good recipe or process for a nice tender and juicy brisket? I see the Texas crutch. I’m ok with that. Mine always turn out like shoe leather.

    That looks delicious. Nice bark on it. Do you brine it first? I’ve never done a brisket, just a few pork shoulders. Brisket is next on my list.

    7 hours at around 275, internal hit 210 when I pulled it off the cooker.

    The bark looks a little spotty on the outside (looks amazing don’t get me wrong) the smoke ring could be missing if you are not using a corse enough pepper/salt blend for the smoke to “stick” to. That or maybe a little more trimming of some of the fat cap. Hard to tell obviously.

    Now you asked, so that is the only reason I offered advice. Who am I to tell a man how to treat his meat?

    Sometimes with brisket liquid will pool up in spots and those areas will effect the bark.

    There is a smoke ring just not as thick as I like it, most of it has to do with the cooker I am using, weber kettle. The rub does not effect the smoke ring but it does have some to do with the bark.

    Fat cap was trimmed to 1/4 inch and rendered to butter..
