Just wondering if any of you are into canning at all. My Wife and I can all the time. Anything from peaches, jams and jellies to taco meat and more.

    Do you can?

I "can" go right to the store. Buahhaaaaahaaaaahhaa

Not a bad idea to can food. What do you need?

Some of my friends can foods, but really isn't that good. Any foods you stay away from?

Done properly, home canned foods are FAR better than anything you can get off the shelf.

For basic canning, jams, jellies, pickles and such, a "cold bath" canning set up is fine. That's the one most are familiar with, big blue speckled pot full of boiling water that you put your jars full of stuff in.

For meats, sauces and foods that have "special needs" a pressure canner is needed. These can be very expensive. Our All American pressure canner cost over $300! However, we have canned stew meat and ready to eat taco meat with it and that stuff is simply delicious!

You have to have basic knowledge of canning to figure out what you need to can what you want. It's a lot like reloading ammunition, you gotta read the manual.

Oh, and it is a lot of fun! Maybe I'm just old and easily entertained.

Foods to stay away from? I'd say don't can anything you don't like. Lol!

Great information. Something to concider for longer term storage solutions.

    Thank you.

    So it's like vaccum sealing?
How do you figure out the expiration date?

Yeah, mostly. The main difference is that the boiling kills any bacteria that may be present. In fact, most of your vacuum sealers now come with a Mason jar attachment just for vacuum sealing.

Expiration dates are figured by some gubment health organization and can be looked up. For me, basically, if it doesn't smell bad when opened and the taste and consistency is ok, imma gonna eat it. Lol!! There have been reports of VERY old canned goods being consumed with no ill effects. Not my cup of tea though.

I made and canned alot of strawberry and raspberry jam last year. So good. Way better than you can buy at the store. Pretty easy too.

The cooling off after you set the lid causes a vacuum and you can hear the lids pop inward with an audible snap. If the lids have popped back outward either the seal is broken or the contents are starting to ferment or rot.

Used to be hard core about subsistence life style and prepping, damn zombies never showed up! Bride ground grain for bread, milked goats, made cheese and yogurt. One year we even grew peanuts n made peanut butter . Too damn much work in AZ. I built stuff, trapped for pelts, and worked on local ranches building fence and clearing trails mostly. Now I supervise construction work.

I've been feeling like something is coming that will change things and I want me and mine to be ready to sustain after anything occurs, quite a change from so cal to idaho, like having the experience now of dragging something from the sticks and calling it dinner
