    Picked up a packer brisket
    Seperated the flat and point. Point went into the freezer for another day
    Trimmed the flat and on the smoker it went
    Cooking today since it’s supposed to rain all weekend
    Going to be great tomorrow with some pintos.

    Normally stalls around 165 degrees. You can wrap to go past the stall or leave it alone. Wanna then get it to 190-200 and then wrap for an hour. Then dig in.

    Stall as mentioned around 165-170

    When it hits that area I wrap
    It’s not taking anymore smoke just heat

    Smoke ring could be better but I always have a hard time wth brisket and a smoke ring

    I get Rich’s frustration. You always aim for they perfect BBQ. I have never been pleased with anyone of my butts until last weekend where I FINALLY got the perfect pulled pork.

    No I am not going to stress over it, I have put a lot of work, a tight budget and emotion into this place, its just a house I know. I can do a few things just not the punch list I was looking to complete.

    Fam loved the pork and I didn’t. Kept asking me why I was not happy with it and kept telling them it wasn’t “perfect”. Was sooooo happy when I nailed it last weekend
