    As the title says let's share some recipes.
    I'll go first, Pumpkin Pancakes
    1-30 oz can of Libbys Pumpkin Pie Filling
    5 cups of Bisquick
    4 eggs
    2 cups milk
    2 TBS of pure vanilla extract
    4 TBS of brown sugar
    Nutmeg to taste
    Pumpkin spice to taste
    2 cups crushed pecans or walnuts, if you like them.
    Mix everything together let rest for about 15 minutes.
    Cook at 325° because of the brown sugar.

    ETA, this makes about 25 4 inch pancakes

    Here's a really quick and easy one for those lazy nights.

    BBQ Apricot Chicken Thighs:

    - 6 - 8 skinless, boneless chicken thighs
    - 1 cup BBQ sauce
    - 1 cup apricot jam
    - 1 TBSP Worcestershire sauce

    Whisk together BBQ sauce, apricot jam and Worc sauce until a smooth sauce. Place chicken thighs in a casserole dish and cover completely with sauce. Bake in oven at 375 degrees for 20 - 30 minutes. Serve over rice.
