    Family is gone for the weekend, so I am grilling just for myself.
    Dinner was brats and grilled sandwiches (cheese, tomato, onion, garlic butter). Leftovers with 2 eggs for breakfast.

    I used 3 different spices on each of the chops - a little experimentation. All three were equally good.

    80/20 patty with crushed red pepper and fresh chopped garlic in it. Topped with fresh mozzarella, basil, grilled red onion and sundried tomatoes. Was quite tastey.
    But if I do it again it would be good with hot Italian sausage mixed with beef

    Zucchini slices marinated in olive oil, fresh lemon juice and zest, chopped garlic and S&P. Grilled after an hour in marinade. This was very very good.

    Cauliflower grilled in foil pack with oil, garlic, parmesan, S&P not bad just kinda soft.

    Glass of red zinfandel which is starting to become my favorite wine, close 2nd behind a good cab

    I do similar with chicken and pork. Instead of foil I use grill mats. It helps to still get good grilled flavor and even grill marks, but prevent burning - especially when the chicken is marinated which causes flare-ups if just placed on the open grate.

    You can get them at WalMart, Lowes, Home Depot etc. at the grill departments. They last a long time - easy to wash and re-use. With the current copper fad in cookware I see that you get these in copper now also. I have not tried them though.

    Soooo - a few weeks ago I put an 13 pound turkey stuffed with apples, lemon, celery, and onions seasoned with thyme, garlic, old bay, sage. And rosemary on the grill.

    In the pan I had tarragon white wine, the cheapest beer I could find a mixture of what I used for stuffing and bbq sauce.

    Then I had fresh green beans and onions seasoned with butter olive oil garlic salt pepper and a bit of Montreal chicken seasoning on the grill also

    As you can see I did a pork roast as well. All of my pork roast seasonings were stuffed into the meat so they would melt in.

    Corn on the cob was seasoned with crushed onion butter garlic salt and pepper.

    I picked up a Blackstone Griddle during Amazon Prime Day... they are no joke. Outside of smoking, they are cooking just about anything I can come up on par or better than the charcoal grill I have. Steak, smash burgers (best burger I've ever eaten), pancakes, wings, Japanese steakhouse style food, bacon, etc. Not a replacement for a smoker, but a nice addition for sure.

    Those griddles are very versatile. I have an old Craftsman cast iron griddle that's about 2/3rds the size of yours. Can pretty much cook anything on it.

    They really are. I was skeptical but couldn't pass it up at $200. In a week I've cooked 70% of my meals on it and would chose it over my charcoal Weber for almost every situation. No hate on charcoal either, it has a place, but for daily cooking these griddles are sweet.

    Yeah. I use my Weber mostly for smoking/grilling ribs and butts. I use a Lodge cast iron Sportsman grill for doing steaks and burgers. I use the griddle a lot for breakfast goodies, fajita's, veggies, and burgers too.:thumbsup:

    I love it. That's going to my next grill. I have a propane grill (for the simple folks, hot dogs etc) I have a traeger smoker which I absolutely love for meats... But who says I can't be a benihana in the backyard?? Flat top grill next!

    That's the right grill but it looks like they're using charcoal. Normally, red oak harvested locally in area is used instead of charcoal. It gives the bbqd meat a nice smoky flavor in addition to the dry rub.
