    I hickory smoke in a Traeger LiL Texas pellet smoker for 1.5 hrs, then roast at 350d for 30 min or until the bacon is carmelized...perfecto! I like venison pink in the center, it’s easy to over cook if your not careful.

    Spring turkey season in Texas hill country. One of my favorite times of the year. That is with the exception of 30-40 winds. Temp was 35 Sunday morning. Probably close to a record. Gobbler with a 10" and 2 smaller beards.

    To be honest, I got so excited when I grabbed the rod, we lost track. It was a hard fight got him to the boat 3 times before he finally got landed. I was so exhausted, I could barley hold him up for photo. Going back in October. Ate some sashimi style:yes:
