How is this supposed to work? Is the sensitivity settings and etc for veering out of your lane or does it do something when you're close to another vehicle at a certain speed? Is there a way to find out if it's working properly???

If you are coming up too fast on a vehicle, etc it will notice and beep and give you an alert on the dash.

With cruise control you can select a following distance and it will decrease/increase your speed accordingly in regards to traffic in your lane.

I would read the owners manual for a thorough explanation though.

The owner's manual shows you how to adjust the sensitivity for the anti collision control, the adaptive cruise, LDA and the little "get a cup of coffee" reminder (sway control). It is really worth reading.
