Hickory Smokin a couple racks of Carolina Baby Backs..

    Decided to dry rub these fresh not frozen squealer racks and run them through the Traeger 3.5,2,1 smoke recipe. Topped off the pellet bin with hickory pellets will give these baby backs a 3.5 hr slow low rolling smoke, 2 hrs of 225d roast wrapped and sealed in foil w/cup of apple juice, 1 final hr to carmalize.

    Put a "Texas crutch" on all three racks....and back in smoker for a 2hr slow roast @225d. A cup of apple juice so they are fall off the bone tender for the final 1 bark glazing.

    Finished, but a minor presentation fail lol...one rack fell apart while I moved it from the foil onto the cutting board. They are fall off the bone tender.

    Are those st Louis cut? I found the 3,2,1 is the best way for them.
