Fresh dill is in the stores so I threw together a little batch of cold pickles.
The two on the left have habenero in there

My step dad is up the street canning pickles right now- the whole process of boiling the jars and lids and doing the seal. They're using the little pickling cukes. "Real" canning. These I made are much simpler. Sliced up regular old cucumbers, threw in sliced garlic, onions, habenero and dill, and filled the jars with brine. They sit on the counter for a day then in the fridge for a week. Easy-peasy!

We're about to tackle making some pickles by the end of the week!
Made my first batch of hot sauce, that we refer to as Portuguese Pimenta. It's just chili peppers ground up and salt added.

Some fresh picked corn in the background as well! Once the pickles are done, I'll try to remember to post up lol.

How long will the cold pickles last in the fridge? They are not shelf stable, right?

From what I'm reading they're good "up to six months" in the fridge. They never make it anywhere near that long before total consumption...
Correct, must be kept in the fridge.
