Roasted chicken on the grill, rain hold off please, home made scalloped potatoes in a cast iron skillet with some garlic, onion, a little bacon grease, butter, whole milk and cheddar cheese.
I hit the chicken with some webers kickin chicken and stuffed with lemons and sage.
The potatoes I sliced by hand since I do not have a mandolin, pre heated the skillet, put a qtr stick of butter in the bottom lined with potatoes, seasoned then hit with cheese, then repeat for 2 more layers, then hit with cheese and rest of stick of butter, its covered in the oven now chicken4.jpg chicken6.jpg chicken7.jpg chicken5.jpg chicken8.jpg
    Cant wait...

Are you sure that Colorado isn't your next place of residence? Could have swore you heard me start that rumor someplace.

So the chicken was spot on,

The potatoes, were OK, but not great. So I have some learning to do with that recipe before I serve it to others. It was good, seasoning was almost spot on, needed a little more heat for my taste and I think I used a little to much butter and milk, need to cut those back to say half of what I used.
Cast iron skillet cleaned up great, as usual.

Well I am full, have leftovers for a few days, now to clean the kitchen and kick it
