    These weekends, July 4th, Memorial Day, Labor Day, we stay off the highway, far from the boat ramps and away from the woods. Too many crazy people. We stock up on lots of great food, good beer, and fine scotch. Then LOCK THE GATE! Later we'll be drinking whiskey, smoking seegars and trash talking women. Shooting some pool later.

    A bacon bomb (my wife refers to it as a cardiac loaf lol) is 2 to 3 pounds of bacon, weaved into a mat. I go 1 strip wide. 1 pound of bacon, fried crispy and chopped. 1 1/2 to 2 pounds of pork sausage (whatever you like, I prefer spicy but without fennel). A couple of jalapeños, red bell pepper and onion diced. Mix the chopped bacon, peppers and onion in the pork sausage and spread it on the mat of bacon. I leave it about an inch in on one end and both sides and a few inches from the other end. Then you roll it into a beautiful bacon log and tuck the ends. The bacon sticks to itself so it usually stays together pretty well but I put a couple of metal skewers through it just in case. Brush with a little BBQ sauce if you like and put on the grill. I like high but indirect heat and I pull it off when the outside is crispy. Sometimes I'll check the internal temp, 160 is perfect. Pair it with some grilled tomatoes with parmesian and a cold beer and life is good....fat....but good :D

    Finalized tonight's plan: similar to a "bowl" from chipotle Mexican grill, we'll grill strips from a couple T-bone steaks, sauté a few bell peppers and onions mix up some pico de gaio; jalapeño, cilantro, tomato, and onions and dump it on a pile of black beans and rice, with a squeeze of lime. I will take some pictures as we get underway!

    This 8.5 lb Boston butt has been shredded, we warm it up and enjoy in sandwiches or warmed and used as a topping on an ice cold tossed salad. This one really turned out good! Gotta have dark bark!!

    Damn, I got so involved fixin and eatin I forgot to take pictures of this one. Did something a little lighter tonight. Salad: with avacodo, kalamata olives, butter lettuce, tomato, green onions, wet mozzarella, fresh mushrooms, and sautéed shrimp with a dressing of basil pesto made from my window sill basil plants. Yum!

    Fired up and running. 6 butts 3 on top rack 3 in the bottom rack
    I really hope there is no severe weather some rain is ok but nothing bad.
