    Go back and do your DD.
    Chili was always made without beans.
    Only later on did people start throwing beans in it.
    All Chili cook offs today have a "with beans" class but the world champs never use beans.

    The classc 1982 Family Circle ABZ's of cooking provides the authoritative stance on chili. This is also a very good recipe.

    I make simple chili. Heavy on beef( 2lbs), light on beans(1 can). diced tomatoes(2 cans). Diced/ Chopped onion.Chopped diced garlic. sometimes chopped/ mushroom.
    Add salt, pepper, ground cumin, chili powder and cayenne to taste. Served with sour cream and lots of crackers! Might add can of green chilis, jalapenos or hot sauce if out of spices. lol

    the fiesta cans are blends ive made, cause my dad and brother need it milder, and the neighborhood cookoff needed something in between. We didnt have the neighborhood contest this year, and i was expecting a freeze like last year, which is why ive got too much. But chili dog season is just around the corner.

    ive still got a jar left from my last batch in feb.

    Four pound Tri Tip dry rubbed with your fav then BBQd to medium well.
    You can smoke it in a smoker but BBQ is quicker.
    Three cans of fire roasted / diced tomatoes.
    One diced onion
    One bottle of red wine (I use Merlot)
    Slow cook for 2 to 3 Hrs. with lid on, take lid off and let thicken up to the texture you wish.
    • Sea salt
    • Smoked paprika
    • Chili powder
    • Black pepper
    • Cumin
    • Mexican oregano
    • Garlic powder
    • Onion powder
    • Cayenne pepper
    • Crushed red pepper
      Adjust Cayenne and crushed Red to suit taste.

    I thought I would add my recipe, as basic as it is, to contribute to my own thread

    TRIGGER WARNING: BEANS!

    2lbs ground meat
    1 can dark red kidney beans
    1 can light red kidney beans
    1 can pinto beans
    1 can tomato sauce
    1 can diced tomatoes
    2 packs hot chili seasoning (McCormick)
    Chopped garlic and onion to taste
    Fresh Jalepenos to taste
    1 bell pepper
    Beer of choice

    Mix all ingredients (excluding ground beef) into crock pot, turn to low.

    Cook ground beef and add to crock pot, add beer to make it as thick and hearty/thin and soupy as you want. Cook overnight on low.

    It's tastes pretty good and it's simple. But I'm always searching for something better.

    Fwiw, when I grind my chili beef, pretty much same as burger beef, I grind a half pound of bacon with every 3 pounds of chuck. Have family and visitors claim they don't eat pork, but when they don't even know, they eat it and compliment too. Go figure!

    When I saw this thread. It reminded me of this gentleman named Jeremy aka Fireinmybones. He made his chilli on an open fire and cooked everything in a large tin can. I haven't had it for many years and I can still smell it cooking on the open fire. My taste buds get excited thinking about that chilli.

    Whats your top 5 expectations of chili? All of you.

    i've got some time to plan, how many want heat? How many want sweet, how many want meat?

    beans, cheese, salsa, different cheese, sour cream will all be available, but this is texas, we dont force beans on nobody.

    The best guy to answer. If someone was to bring you chili, what are you looking for? Right now?

    everyone shows up at this thing after fasting, knowing theres gonna be 20-30 entries, and nobody wants to bring any of it home.
