    I just ordered 4, I also plan to sharpen them and keep for life. Here are some of the junk knives that we have, the two in the middle are good and just need to be sharpened. I'm Not affiliated with any of these products or companies. Next are water-stones for sharpening.

    What do you have/use? What do you like about the ones you have? Knives or water-stones.

    If you have an Asian food market or maybe Ebay you might find Kiwi branded cutlery from Thailand. IMO pretty good quality and affordable for daily use. A good double sided oilstone keeps em' good and sharp with a few minutes of tlc 5 or 6 times per year.

    Cutco Knives! They are a little pricy but the are American made, have a life time warranty and will send a rep to your house to sharpen them for free.

    I just searched their site and could not find a single bit of information regarding the steels that they use. For me, that’s a little bit of a red flag

    I use the Shun western 8” and enjoy it a lot. I also have the 6” utility and the 3.5” paring of the set.

    I really like how the Shun handles are asymmetrical to fit the hand. I’m right-handed and the ridge on the handle fits in the crease between fingers and palm.

    Thanks. The small Dexter and large Lamson make a good pair. The Dexter has a great feel and balance to it.

    The general consensus among knife people is that cutco are one of the better “stamped” knives but over priced.
    It does seem that for the same amount of money, a couple of quality custom knives might be bought.

    Obviously , what counts the most, is that you are happy using your knives in the kitchen!

    Goals, I have learned, and strive for, are;
    Holds an edge longer
    Easier to sharpen
    More comfortable to hold and use
    A pleasure to the eyes

    Most people have lived their lives using only stainless steel knives and would dislike the extra effort required for maintenance of carbon steel knives. That’s easily understood!

    Man I love this thread! I though am afraid to purchase a good nice knife for the simple fact that I would hate to ruin it when the time comes for it to be sharpened. I live in a very small town and don't know of any place that does sharpening and it's something I know nothing about. With that, I am currently using a set of JA Henckels
