    Yes, it is that time! Came home from Pigeon Forge today and these were on the front porch. 2 rib roasts from Snake River Farms. About 27 different sauces, spices, rubs, marinades, etc......

    Here is my Christmas menu as I have about 20-25 to cook for:

    4 Bone/10lb. Prime Rib x2
    Maple Glazed Sweet Potatoes
    Smoked Crab Dip
    Cheeseburger Egg rolls

    Yum. We do a brunch. Family gets together for egg casserole, sausage gravy and biscuits, cheese grits, homemade cinnamon rolls, pies, cakes, mimosas, etc.

    oh man!! looking good. I get off easy for the Christmas dinner meal. I think I am doing a brined, then smoked full pork loin with homemade cranberry sauce and some mashed potatoes. Can't wait to see pics of your prime ribs.

    Dude!!! So do we!! We call them brunch eggs, usually stale-ish bread chunks, mixed eggs, with green chili and cheese on top, baked. And then biscuits, but not gravey and I don’t know why!!!

    oh and my super old great aunt makes Waldorf salad, I always scrape only the cherries off and eat them:)

    Cherries? Grapes or apples maybe? Never seen it made with cherries. We have Waldorf salad sometimes also.

    Yeah apples and grapes are involved, the maraschino cherries are more of a garnish, for some reason I also get that and the mashed potatoes last at dinner!

    So just FYI, I brine a lot of stuff also...... I found this on All Things BBQ. I have used this for a pork loin and also soaked a pork butt in it then smoked it. It is really really good, like sneaky good!!!

    On Christmas Eve, we'll do the traditional "meatless" dinner with my parents (though we don't typically get to 12 dishes):

    Kutia (boiled wheat with poppy seeds and honey)
    Pyrogies
    Fish
    Coconut shrimp (not traditional)
    Fried mushrooms
    Beans
    Cabbage rolls
    Beets
    Shortbread cookies, butter tarts and fruitcake

    Christmas Day with my wife's parents is usually pretty traditional:
    Mashed potatoes
    Turkey
    Stuffing
    Gravy
    Cauliflower, broccoli and carrots baked with cheese in a white sauce
    Yams baked with peaches and cashews
    Pyrogies
    Corn
    And typically a yule log for dessert

    Since my grandmother doesn't make them any more, we typically buy ours at the farmers market. :anonymous: I found a local lady who makes and sells them but she hasn't called me back to say they're ready for pickup yet.

    But if I can get the recipe from my grandmother or my brother, I'll send it to you.

    Too many, but not enough....
    Damn that looks good! I am going to marinade a couple of giant tri tips in the next couple of days in preparation for christmas dinner. Wife is going to do one and I will do one for the family. Not sure how ill do it yet but no doubt itll be good. I have a lot to live up to, shes from Santa Maria, the home of tri tip.

    Started about 9am this morning. The Snake River Farms roast looks and feels pretty next level. Started 11.8 pounds, probably around 10 after I trimmed and frenched and trimmed the bones. Prime Rib just hit 124 so it is coming off. The crab dip just started and has a little ways. The Maple Ginger glazed sweet potatoes are done and absolutely fantastic. Desert like but one of the best things I have ever ate!

    I'm either a genius or an idiot. It rained all day yesterday and super hard this morning. Finally cleared up around 7:30am My plan for the last 2 weeks was to smoke 3 racks of ribs today and I'll be damned if I'm not smoking them. My backyard is a quagmire inside of a swamp right now.

    Dinner for 10 people includes:
    11.78 pounds of smoked rib with 3 different rubs from Meat Church. (Honey, Voodoo, Gospel)
    7 pound Honey baked ham (I like to think it was the same pig)
    corn on the cob
    smoked asparagus (first time so wish me luck)
    salad
    hawaiian rolls
    scalloped potatoes

    So everything was A+++.

    Crab Dip - It was pretty good. Not bad, but would try a different recipe. It was actually too crabby. I would cook my own crab next time and pull the meat. I believe that would help.

    Snake River Farms Rib Roast - Was the real deal and then some. I got the Choice which runs about $180 delivered. It was better than any Prime grade so have gotten here locally. Once you get into their Prine, then 2 grades of Wagyu, the roast cost is $250 - $480 delivered, not cheap. The Choice at $180 delivered was fantastic. There is zero left and was by far the most favorite dish out of 30+ dishes at Christmas.

    Maple Glazed Sweet Potatoes - One of the better things I have ever made. Would not change the recipe one bit. It is definitely sweet, and does border in the line of dessert. That was the second favorite dish. It is a solid A to A+!

    Family said if I shop up to New Years without the Prime Rib and sweet potatoes I am not welcomed in.......

    No pictures, as it was devoured as soon as I pulled the dishes out!

    Yeah, I have bought prime from a local butcher and grocery store and the SRF Choice was a better cut and more tender. It was really good!

    Only pic I got of the food. The asparagus came out pretty good. 40 minutes at 225 (210 on the Traeger display) light olive oil, Meat Church Gospel rub. The ribs came out awesome.
