    Toasted walnut, pumpkin seed, bacon, feta, apple, raspberry, homemade dressing and some other stuff in this Salad for supper.

    We subbed the prosciutto for butcher made bacon and raspberries for the pomegranet it called for, as the store didn't have it. Spring mix lettuce wad used too as that is my favorite mix of leafy lettuce this time of year.

    Breakfast burritos for camping: flour tortilla, stripe of sriracha ranch dressing, crispy fried potatoes Obrien, scrambled eggs, breakfast sausage crumbles, and of course copious amounts of Mexican blend shredded cheese. Pro tip - pre cook the eggs, potatoes, and sausage and cool it off in the fridge, then lightly grease the foil and assemble the burritos with COLD ingredients. This condenses all the cooking steam and keeps the moisture from soaking the tortilla upon assembly preventing a soggy blown out burrito. We just throw the foil wrapped burritos on the campfire or grill in the morning and slowly warm through ~30 minutes. Alternatively open the foil up and let the steam out to crisp up the tortilla.

    So wanting to make something different, I picked up a slab of Pork Belly, cubed it, browned it added garlic ginger, put it in a pot, 1/3 cup each water, Low sodium soy, and chicken stock. Also 2 tbsp brown sugar & honey! Simmer 90 minutes and tada Pork Candy over rice! Just so damn good!!

    I wasn't too sure about the bacon either but it all goes together really well. Got the recipe from Cooks Country:

    9 ounces bacon, cut into ½-inch pieces
    2¼ cups (11¼ ounces) all-purpose flour
    1 teaspoon table salt
    ¾ teaspoon baking soda
    1 cup packed (7 ounces) light brown sugar
    12 tablespoons unsalted butter, melted
    ½ cup (3½ ounces) granulated sugar
    2 large eggs
    1½ teaspoons vanilla extract
    1½ cups Reese's Pieces

    Adjust oven rack to middle position and heat oven to 425 degrees. Line 2 rimmed baking sheets with parchment paper. Cook bacon in 12-inch nonstick skillet over medium heat until crispy, 7 to 9 minutes. Transfer to paper towel–lined plate and let cool completely. Combine flour, salt, and baking soda in bowl.

    Using stand mixer fitted with paddle, beat brown sugar, melted butter, and granulated sugar on medium speed until well combined, about 1 minute, scraping down bowl as needed. Add eggs and vanilla and beat until fully incorporated, about 30 seconds.

    Reduce speed to low. Slowly add flour mixture and mix until mostly incorporated but some streaks of flour remain, about 30 seconds. Add Reese's Pieces and bacon and mix until evenly distributed throughout dough, about 30 seconds.

    Divide dough into sixteen 2½-ounce portions, about ¼ cup each. Divide any remaining dough evenly among dough portions. Roll dough portions between your wet hands to make dough balls.

    Evenly space dough balls on prepared sheets, 8 balls per sheet. Using your hand, flatten dough balls to ¾-inch thickness.

    Bake cookies, 1 sheet at a time, until centers of cookies are puffed and still very blond, 8 to 10 minutes. (Cookies will seem underdone but will continue to bake as they cool.) Let cookies cool on sheet for 5 minutes. Using spatula, transfer cookies to wire rack and let cool for 10 minutes. Serve warm.

    Nailed a bone in standing rib roast, if I do say so my self.
    Publix has them on sale for under $7. an LB so that's a pretty good deal these days.

    I couldn't resist carving off some of the bark, hmmm...
    Stopped it cooking at about 132 internal so it's a bit on the rare side but it was consistent throughout. Cranked up the convection oven to 450 to preheat. Coated it with Knorr Au Jus gravy mix garlic, salt and pepper. Rubbed it down with wet hands so the gravy mix would blend. Put it in the oven and turned it down to 200 to keep the hot air circulating. took about 2 hours to get there. We'll be eatin' on this for a couple of days.

    So I found a really terrific recipe for Lasagna and made it for Christmas Eve dinner! Possibly the best I have ever made or eaten!

    Made KILLER sauce from scratch, very easy to do!

    The cheesy filling was even easier...

    Assembly was a snap...

    Baked at 375' for about an hour

    A couple of chunks of Garlic Bread, a couple of cold beers, thems good eats!!
