Venison tenderloin....bacon wrapped hickory smoked...

    My wife and I hunt and kill enough deer to fill our freezer and to give to a few folks in need. We share with family and friends as well. But tonight I threw it down with a nice thick white tail tenderloin, and thick center cut bacon wrapped and marinated over night in Jack Daniels honey sesame marinade...then slow hickory smoked. There is nothing like it on the planet.

    Is that cooked well done or does it just look like it? I've always been told anything more than medium and venison gets real tough. I always end up with a bloody plate when I make deer.

    Wrapped in bacon really really keeps the lean vension moist...center cut thick bacon lets that bacon fat keep it all perfect. The biggest challenge with smoking, grilling venison is knowing how to prepare it.

    Makes sense. I've never tried smoking venison, I've always heard it was better just to grill it hot and fast due to the low fat content. But then I have heard people that have smoked it and it turned out really good.

    So my frozen Costco burgers were ok tonight. Taters on the side. Got a new Dutch oven getting ready for camping this weekend so doing a peach dump cake recipe.
    Damn I hate you guys w game near you. I got fish, carp, catfish. Donkeys n the extremely rare mule deer.
    Dove season is real short.

    It is legal to shoot deer with a bow or crossbow ONLY IF you live out in the county here in Western NC. This is per the local game warden. This backstrapper was not taken in our woods. It came off a local farm.

    You are right and that is true, without being bacon wrapped it can dry out fast as it is super lean meat. I only smoke it 1.5 hrs in a heavy bath of hickory smoke. Then 350 Degrees for 30-35 min to really caramelize the bacon sizzling hot and it cooks the tenderloin just perfect.
