They’ll likely just reuse the top hat from your originals.
I would ask and just buy new top hats if they aren’t assembled so you have fresh bushings and keeps your originals intact if you want to keep them.

The truck has 112,000 Miles on it, so unlikely I want to hang onto the old parts?

I can see the reason for the fresh bushings.

Would the top caps be Toyota replacement parts?

unknown, but i just had mine put on and it came with new too hats, was a little extra. I am at the 2.5 setting. 1.9 would have cleared tires. But i did not want to chance it. running 295/60R20 Wildpeaks. Love the ride and feel of tire. Its the quietest AT3 tire i ever ran.

Shocks i think would ride better at 1.9 on bumps. On road it drives great where it is at.

You can go OEM I think they are like $75 each.
I went with KYB for like $30 each and they are good quality.

If they can’t get a simple top hat be it OEM or aftermarket you certainly don’t want them working on your truck.

The KYB top hats are what most places use that sell the 6112s pre-assembled. They are perfectly fine for this application and should be readily available. Depending on where they're ordering them from they should be able to add them in the order.
Your problem may be availability. The 6112s are out of stock everywhere and no real ETA. If you can wait several weeks or even months then you're good. If you want to get something on sooner you may want to look at other options in that general category.

Yeah, I'm just not sure how the shop will feel if I show up with my own parts...

If they can't get them from wherever they source parts, maybe I will suggest shock surplus, but again, not sure how they will feel about that.

I imagine they expect to make money on supplying the parts.

I wouldn't really worry about that. They make their money off labor.

With that said I just installed the Eibach stage 2's Friday. Took about 4 hrs total (3 on drivers side and 1 on passenger). It's really easy install once you succumb to loosening the camber bolts (you'll need an alignment whether you loosen them or not).

I wish I felt confident doing this kind of work myself, believe me.

I felt pretty good about installing the GoRhino running boards myself.

That said, anybody local who wants to tackle the project with me, hit me up lol.

I'll definitely ask my shop about providing the parts myself if they can't seem to get them.

Just as easy not loosening the camber bolts.
    Fronts were cake.
I had a seized nut on a rear shock. That took forever not much room to work up too there.
Need to get a nut splitter after that fiasco that probably would have solved the issue in short order. Getting a cutting wheel up there without damaging the wheel well liner was fun.

I've read that several times. Just wasn't true in my case. Bent a pry bar trying to get the LCA far enough down to fit the longer shocks. Since the geometry is changing with the lift, it didnt make since to continue to fight it.

Ahh, yes the pry bar method.
Should have gone with the couple of double cheese burgers for lunch then stand in the lower control arm.
Makes plenty of room for the longer shocks.

Most shops are OK with you bringing your own parts, especially if they can't get them themselves.
If they can't get the Bilsteins in a reasonable amount of time, see what they can get.
Like @Djone27, I'm running the Eibach Coilover 2.0 Stage 2 kit and very happy with them. Equal to the Bilsteins in build quality and ride, plus fully adjustable coilovers. Should be easily sourced straight from Eibach, and about the same or maybe even a little less than the Bilsteins.

So my local shop received the 6112's, confirmed that I will be getting new top caps...

Now I need to decide on whether to go with middle or top setting.

    I am thinking either 1.3" or 1.9"

    Probably leaning towards 1.3"
