Taking on the Tomohawks. A beginners observation.

    Well we did it. California still has a host a lockdown problems, and the thought of dropping that much coin for subpar services and quality meat forced me in the backyard..again. At 50, I've bbqed alot but I'm not in the fancy league with some of the guys that argue about wood chips and thousand dollar grills and smokers. I just wanted four Tomohawks and was a tad intimidated at the practicality of cooking them properly.

    Expect to cradle them out of the store like a small child. They will be wrapped in traditional butchers paper much like a Christmas present without the bow. You'll get some headturning and a few puzzling looks from clerks. Use your best points credit card. One Tomohawk can feed two hungry adults. We had four at over 13.5 lbs total.

    Prep. Clear those counters. Salt and pepper. Nice and thick, but don't lose your mind with it. Room temp when you coat them. Sometimes dabbing them with a towel helps as they can be a bit more juicy than your 16 ounce ribeye.

    Butter and garlic is a must. Grill was preheated on high. You'll likely only get two to fit properly. Sear them good. Brush with copious amounts of butter and garlic. Once seared, place on a giant baking pan. In the oven for a quick 375F till the internal temp is 125F for medium rare, 135 for medium, and for the ladies who kill their meat...145F

    Pull them to rest. Takes about ten minutes. Temp will increase at rest about 5 to 7 degrees. You can wrap the bone with a wet paper towel and wrap in foil if that's your thing before placing on grill or oven (looks better).

    They aren't practical to eat on a normal plate. Cut cooked portions and serve. We went the Fred Flintstone route and made a mess.

    Very cool post. I’ve been wanting to try a couple of these ever since I saw them at Sams. You may have just pushed me over the edge. I will probably reverse sear mine and finish on a super hot grill. I like to add rosemary & thyme to the garlic butter.

    Yes great that way too. I reverse sear at 700 degrees.

    I get them every time I see them on sale. It is quite the spectacle. The prep and cooking are as much fun as the eating. Plenty of beers and and onlookers while getting it ready. I reverse sear mine. Making sure they're at room temp before you start also helps.

    I've never done the tomahawks. I honestly can't say I've seen them in the stores around here. Probably have to ask for them. I've always wanted to try them though. Maybe a father's day dinner next month:monocle:

    This is so funny, I can totally relate. A chef friend of mine gifted me a Tomahawk, and I swear to you it was as big as my head! I told him "what the hell am I gonna do w/this?"
    Well to say I was intimidated was an understatement. He walked me through how to prep and grill it, and needless to say it turned out awesome. "We", my wife and I who are tiny women ate on it for 2 days....

    As one of those previously mentioned smoker snobs I like smoking these until they get to about 135 and then reverse searing them.

    Caramelize some onions & peppers then slices of the steak on a toasted french bread topped with shredded gruyere cheese and maybe a little horseradish mayo...under the broiler just long enough to melt the cheese. :thumbsup:
