Slow N sear review + “improvement”

    So I’ve been using the SNS grills slow n sear accessory in my kettle for about a year and a half now. I got the 2.0 version with the removable water tray.

    I love it except for how annoying it is on long cooks to have to stir the coals every other hour or so. This issue has been so frustrating, i have lost a couple of pork butts on overnight cooks, even when topping off the coals before bed, the fire snuffs itself out with ash after 5 hours or so.

    This morning before I cooked a pork butt, I finally decided to cut the grate off of the charcoal basket. This grate was added in the 2.0 version of the SNS, and in my opinion ruins the accessory. The grate is too flat to allow ash to fall as the coals burn, requiring a lot of stirring to keep the coals burning evenly. My test result today was 100% improvement. With the coals resting directly on the weber grate, the ash fell through as the coals burned, eliminating temp fluctuations during the entire cook.

    I highly recommend SNS products, however do not buy the version 2. Buy the original slow n sear. It has an open bottom charcoal basket.
