Some dishes from sweet home (Wallis and Futuna Is.)

A cousin of mine from Futuna. A piglet cooked in a smothered way with breadfruits.


At Uvea (Wallis Is.) with my students we cooked a piglet with yams and taros in an earth oven.

The ‘hua’ is prepared in a wooden trough (kumete). It is made of manioc flavour melt with water and cooked with incandescent stones. The resulting paste is cut in pieces mixed with coconut milk. When it’s is done the ‘hua’ is wrapped in banana leaves. We eat it with ripe bananas.
