    It's Canadian bacon, not the greasy (but tasty) shit. 3 slices have 60 calories. 1.5g of fat, 1g of carbs, 10g of protein. The salt is something I could do without. The Cheese is 1/2 a serving so it's mostly fat and protein.

    The egg yolk is dramatically healthier than almost anything else we eat.

    Your body will make cholesterol if you don’t eat enough, might as well give it the best stuff. Your body will actually make more if you restrict consumption.

    I don’t get too hung up on the nitrates - there are conflicting studies and some evidence that they are actually beneficial in the small doses you’d actually get from consuming small amounts of cured meat. Salt is also a necessary nutrient, just not in the standard western diet quantities. But if someone is sticking to a good diet with very limited simple carbohydrates (processed sugars) and limited processed foods, you’ll find that some salt is necessary.

    My wife’s got her master’s in functional medicine, human nutrition and diet. It’s a very complex system tying gut health, diet, exercise, stress, sleep, and even environment to ultimate health.

    If possible, stick to minimal processing of your food. Stay on the outer edges of the grocery store. Vary your sources of protein and vegetables - buy in season when possible. Don’t overdo it on fruit intake (think sugar). Dairy in limited amounts and only if you tolerate. Keep your Omega-3/-9 in balance (grass-fed beef, fish, reduce grain intake).

    Most important is just pay attention to what you put in your face...

    Tonight on the menu was this 6lb. whole chicken that was without a doubt, the best chicken I've ever made/had. :hungry: The wife ran across Nature's Promise a few Month's ago, they make lots of food products, but their poultry is simply amazing. Give it a try if you see some at your grocer, you wont be disappointed. :thumbsup:

    Smoker chicken, triple smoked ham, butcher made thick cut bacon, cheese, lettuce, tomato, local made bread and honey mustard sauce (I don't do mayo)

    • Homemade ground pork cooked with spices, rice vinegar, and Thai curry sauce
    • Home shredded and rice vinegar pickled root veggies (celeriac, turnip, parsnip, daikon radish)
    • Homemade fresh dressing with homemade mayo and Thai curry sauce
    • Homemade toast (wife baked it earlier today)
    This is a bit of a staple when we don’t plan ahead. 45 minutes ago, the pork was still in the freezer and I was just thinking I needed to make dinner...
    Other than the rice vinegar and the Thai curry sauce I use, 100% of the rest of this meal is locally grown, harvested, processed, and organic - even the basil and cilantro.

    Thank you! It was very good. Sadly no, the scallops were store bought. I'm in Idaho so a road trip to Oregon or Washington is not out of the question so I'm hoping to bring back some fresh seafood eventually.

    I made this a few days ago, but I have to share because it was very good, and cant wait to make again. It s called; "Cheesy Scalloped Potatoes and Ham". I deviated from the recipe a bit. I added twice as much of both cheeses, and used extra sharp chedder instead of normal chedder. I also increased whole milk to 1 1/2 cups for more sauce, and doubled up on the amount of ham. Basically I added a little more of everything. It s easy to make, and if you use red or golden spuds no peeling necessary:DRecipe is here.
